Gratin of endives in Béchamelle sauce, with pancetta, lots of garlic, Parmiggiano, and a hint of freshly grated nutmeg....lovely with a glass of Cabernet Franc from the Loire Valley.....and for dessert a pear and Fuji apple compote spiced with cinnamon, coriander, ginger, and a good shake of Nigerian cayenne. Nice to be home on a Thursday, because of snow, and cook up a storm!
I also made blueberry jam, a corn chowder, and a Thai green curry with pumpkin and chicken.....Oh! and Irish oatmeal for the next couple of days...
