By request of two teenage boys, it's "chicken and rice"
...which means that I lightly brown boneless, skinless chicken breasts in a little olive oil...sprinkling them with salt, pepper, garlic powder and poultry seasoning.
In a baking dish, I put 1-1/2 cups of basmati rice and pour 3 cups of chicken stock over top. Lay the browned (but not cooked) chicken breasts on top.
Toss 1 chopped onion into the pan the chicken just left and saute until transparent, then put the onion on top of the chicken (and scrape in the pan juices just because)...cover the whole thing with foil and bake at 350 degrees until the chicken and rice are both done.
It's yummy if I do say so myself...and works for my healthier way of eating too.
