Two roasting chickens are in the oven right now...covered in coarse sea salt, fresh ground pepper, a little poultry seasoning, and a big cube of butter on each.
They'll be served alongside julienned potatoes cooked in casserole with sauteed onions, peppers from the yard, some leftover queso, milk and a little flour to thicken it.
I have no idea what the veggie may be.....probably peas cuz they're in the freezer, and I don't feel like running out to the store.
