How do you know the food you are eating is really good?

Because it is so hot in your mouth that you refuse to spit back to the plate (cringes at that anyway).. and you bounce said food around your mouth..with your mouth open letting air in..until it cools down enough to eat..
even though you have been eating right along and letting it scorch your mouth and throat.
