Today's menu so far...
Breakfast:
- black coffee
- 1 slice whole wheat toast with tuna salad
Mid-morning snack:
- last of the cantaloupe...about a cup
- greek yogurt
Lunch (right now):
- Salad with....
- organic baby greeens
- tomato
- half a cucumber
- 1 hard boiled egg
- about 1/2 cup garbanzo beans (have rediscovered my love for these on salad)
- small amount of avocado...maybe 1/6 ?
- homemade cider vinegar and EVOO dressing
For dinner tonight I'm making homemade soup....stock I made from the ham bone (baked ham for dinner Sunday night)....with onions, canellini beans and chunks of the ham. Yummy....and legumes!
