Hey all y'all healthy folks!
I'm sorry I haven't posted in awhile... although I've been faithfully reading your updates everyday. I guess the last week or so, I've been in a slight stump. I haven't binged, but I could feel my motivation slipping away. I've been watching what I eat, but have noticed that I'm giving myself a lil' too much leeway with comfort food.
When I weighed last week, I was at a standstill again. I KNOW that I've got to get moving again... I am the only one that can make these changes. Seeing all of your updates & encouraging words is giving me the reality check that I need!
The other night, I was craving chicken spaghetti. Yeah, I know, not the healthiest dinner, but I made my modifications and it was AWESOME!
1 pound cooked, cubed chicken
1 - can rotel tomato
1 - can or jar of mushrooms
1 - can Healthy Request cream of chicken soup
1 - package of whole wheat pasta (thin or angel hair)
6 oz - cubed 2% milk velvetta cheese (half the fat & calories of regular velvetta & tastes the same)
Just boil & drain the pasta. Add the cheese & soup while the pasta is still warm (it helps melt the cheese). Then mix in the chicken, rotel & mushrooms... voila dinner is served! Seriously, it tasted exactly the same as my old receipe!
Yesterday, the focus went back to watching portion control and upping my water intake. Tonight, we are hitting the gym whether D likes it or not
Meals planned for the day today...
Breakfast:
multigrain cheerios with 2% milk
a banana
and a small sugar free vanilla iced coffe
Lunch:
tuna salad on a wrap with lettuce & tomato
apple slices & grapes
Dinner:
grilled boneless pork chops
grilled zuchinni
baked sweet potato for me (plain potato for D)
and a LIGHT ceaser salad
