Hello healthy peeps....just checking it to see how everyone is doing.
I'm still on track with the eating plan...and still need to do more exercise (sigh)...
Today's lunch is a salad without lettuce (since I ran out...oops)...and I'm rapidly deciding I like it better! Ingredients today are:
- 2 carrots, peeled and diced
- 2 stalks of celery, diced
- big handful cauliflower, diced
- handful of radishes, diced (do you see a pattern here? lol )
- half a cucumber, diced
- half a can of cannelini beans, drained and rinsed...right out of the can
- about a third of a can of black olives, drained
- and a good splash of homemade olive oil and apple cider vinegar dressing
Yummy!!
