I sliced and diced a russet and sweet potato, added a little EVO, mixed it all up and roasted in a pan'
Then I seasoned a couple chicken leg quarters and baked them.

I did share some chicken with my rescues, but not all of them wanted it...thank goodness or I'd of only had the potatoes for me
