Before I left work, I was asked to come back at 5pm and work again, so dinner turned into lunch and I left lunch in the fridge at work for dinner.

I fried up a few corn tortillas, used some refried beans from yesterday's dinner, chopped a roma tomato and jalapeno, topped it off with cheddar cheese....meatless tostadas, yum, yum, yum

Lunch should've been a bologna sandwich, sour cream & onion Pringles, vanilla Oreos and bottled water.
