I do understand about sentimental value. Most of the knives in my collection could be replaced, but, similar to you, there are a few that couldn't be.But ah, I do love my knives!

It's easy to operate Tommi, just pull on the side where the little dips are. Unless it's a full-size unit, that I can't help you with. The oil, yeah, what Warrick said.
