Fiddlehead greens are the furled fronds of a young fern, harvested for use as a vegetable. In NZ we call them Koru; they have a spiritual meaning of new life; new beginnings. They taste great in a Spaghetti Carbonara; boiled for 5 minutes before being sautéed with the other ingredients.
