My boss gave me some fire roasted chiles she cooked and froze in quart zip locks. She was in Hatch, New Mexico with her husband and brought home a bushel of them. Before I left work, I already had planned what to use half the bag for. I stopped at the grocery store picked up a few items I didn't have and began preparing a meal. I took a big can of diced tomatoes, sliced a pound of carrots, diced a large onion, chopped up the roasted chiles and tossed it all in my crock pot. I opened a can of black beans, rinsed them and added to the pot. I cut up 1 1/4 pounds of sirloin steak and added it along with a can of chicken broth. Finally I diced up 3 potatoes, added cumin and 3 smashed and diced garlic cloves. Mixed it all up, put the lid on, turned it on high and will probably not get to eat it until tomorrow...here's hoping it comes out with a little bite to it or a big bite from the chiles. I'll probably have to freeze some in individual servings since the crock is filled to the max.
