Tonight I roasted the organic vegetables that we still hadn't used from a local farmers market. We had roasted sweet potatoes (that were the size of fingerling potatoes), corn on the cob (cut into small rings), carrots (that were miniature version of regular sized carrots) and radishes. The sweet potatoes were drizzled with olive oil and dusted with paprika and the other vegetables with olive oil and fresh ground salt and pepper.
Dapper enjoyed it so much, hy went back for seconds... and then stole one of my corn on the cobs. Shocking, I know.
