I have a mad week ahead, in the run up to my gala fundraising event,
and apparently another foot of snow on the way .gif)
; I've been on a cooking blitz this afternoon with the aim of making my life a little less frantic.
I've made:
A large pot of Irish steel cut oats with lots of spices (my secret ingredient is Jamaican All Spice, which takes the oats from bland to zingy), and then portioned them off into mason jars with layers of blueberries and blackberries. Et voila - breakfast for the next week, grab and go.
A big spinach salad with tomato, cuke, and almonds.
A pot of risotto with prosciutto.
A package of chicken breast baked in a homemade olive oil, garlic, dry red pepper & italian spices marinade.
I now have multiple ingredients that can be thrown together with very little effort, in a multitude of ways, and taken as relatively healthy meals on the run.
