oh!!! super easy way to make homemade ravioli ( and its light feeling, like little pillows of yummy)

If you don't want to make your own ricotta, then buy a tub.
you'll also need a package of won ton wrappers
some herbs ( my favs are basil, oregano, and parsley. rosemary is a bit aromatic)
salt and pepper
and your favorite sauce( home made or jarred)

mix ricotta and herbs in a bowl. salt and pepper to taste (or leave out)
spoon mixture into middle of wonton wrappers. wet the edges all the way around. now, you can either fold onto triangles, or just lay another wonton wrapper ontop. press all around edges to ensure they are sealed. toss into boiling water. when they are floating on top, then scoop out with a spoon and put on strainer. add sauce and pecorino/parmesan and voila!
