Tonight I made what some call a "Greek inspired" salad. The salad consists of roasted chicken, hearts of romaine, tomatoes, cucumber, red onion, artichokes, cracked green olives, and feta cheese. The dressing is red wine vinegar, olive oil, minced garlic, fresh oregano, sea salt, fresh ground pepper, whisked firmly then drizzled over the salad.
