A bed of vegetable harvest rice, then a layer of a butterbean and corn mix, then my pork loin (thicker than most steaks! Yum!), a schmear of guac on top of the pork steak with fresh salsa on top of that. On the side was sweet potato fries. Rootbeer to drink.
Dessert was a fruit salad/parfait of sorts. Building from the bottom: blueberries, sliced strawberries, two spoonfuls of Breyers Cherry Vanilla ice cream, 3 spoonfuls of light Cool Whip, blackberries and raspberries. Mix until coated well and all yummy ooey gooey and eat it like it's going out of style.
