For breakfast I had the special at my Local Joint....
It was a Meditteranean breakfast bowl with a potato pancake in the bottom, smothered with sauteed eggplant, mushrooms and garlicky spinach. I substituted feta for goat's cheese, then on top of that were two pesto fried eggs. Topped with roasted red pepper ailoli and crumbled local sausage that tasted like chorizo....
*big breath*
It was a total mouthgasm...
And the best local coffee...Dynamite coffee outbof Black Mountain. Made.my.day.week.month!
