This Thai shrimp salad I just whipped up. With jicama, carrots, celery, green onions, fresh cilantro, mint, lime juice, fish sauce and a pinch of sugar. It's virtually fat free if you don't sprinkle crushed peanuts on top. Soooo good and refreshing. I added a couple of dashes of tapatio as well just for a kick.
