I'm making breakfast for supper tonight, for my dinner guests (Jackie and her mom).
I baked a bunch of parsnips yesterday, then let them cool in the fridge. I take the baked parsnips and mash them into little cakes, then smoosh chopped walnuts onto each side of the cake, then fry them in coconut oil.
I'm also using Tofurky breakfast sausage and making little patties, which I cook in the skillet after I'm done cooking the walnut encrusted parsnip cakes.
For dessert, it's chunks of cantaloupe, sprinkled lightly with Chia seeds and sea salt.
