Yam/Sweet Potato "Pie" for dessert
I will throw in yams and heads of garlic for later use while the 'shrooms bake
With the roasted yams I make something that to me is reminiscent of pumpkin pie*, mash the yam add appropriate cinnomon, ground cloves, etc and chopped walnuts on top for texture with a bit of butter for richness.
*Given that I haven't had actual pumpkin pie in about a decade, it works for me..
