I must have worked up a giant appetite this week because I am eating a lot of things today. I've got the homemade vegetable barley soup going on the stove for supper tonight... but in the meantime, for Lunch, I have been eating Ritz crackers and putting tons of vegan 'cream cheese' on them. I added roasted minced garlic and scallions to my vegan 'cream cheese' stuff and it's so good that I keep eating more and more of it.
