Well, I figured it out. It was ugly (literally...Gordon Ramsay would have been disgusted), but it was good.
It was a raid the fridge kind of meal: pulled roasted skinless chicken breast, brown rice, onion, orange pepper, mini red peppers, jalopenos, and a few TBS of light buttermilk ranch dressing all stirred up together and cooked in the skillet.
Organic got red beans with Mexican blend shredded cheese and chopped onion on top and I got pickled beets. Mmmmmm..... .....beeeeets.
