I tried a new recipe that I found on one of the whole foods/Paleo blogs that I visit, called "Coconut Shrimp Bowl."

The original recipe which you can find here, Coconut shrimp Bowl did not have enough veggies for my tastes so I adjusted it a bit and added some sliced mushroom, green onion and then I made zucchini noodles to stir in during the last couple of minutes of cooking. It was really good.

It's clean out the fridge day because trash pick up is tonight, so I will have a mishmash of leftovers for supper tonight; a little salad, some leftover coconut shrimp bowl, and some butternut squash soup is what I am thinking at this time.
