how long do i cook this 2.58 lb pot roast that's been browned and is simmering (or maybe on the high end of simmering) on the stove in my caribbean blue colored le creuset dutch oven?



the bottom of the pan has a bit of last night's red wine (a spanish) and a diced onion, secret ingredients and quartered mushrooms.

help?*

a. we're having late-christmas at my sisters, so this will be traveling 30 minutes in the car.

b. we're at sea level.

c. i think it's about 70 degrees outside.

d. sunny, dry.
