I don't know what possessed me...I had 3 hours between clients so I came home and made lunch...
I boiled a rice in a bag and added in frozen cauliflower broccoli mix...then some chicken/spinach/feta sausage...a sprinkle of salt and pepper and some parmesan cheese. It tasted like a nice risotto... Sometimes I'm a wicked good cook. For my tastes any way. And really...that's all that matters at his point in time
