I have become a big fan of the "giant salad lunch"
 Today's salad (up to the 2 quart line) includes lettuce, half a cucumber, a big handful of raw cauliflower, a carrot, about 1/2 cup canellini beans (again, straight out of the can...just rinsed...such an easy way to eat more legumes), handful of black olives and my homemade olive oil/apple cider vinegar dressing. It's crunchy, it's filling, it's yummy and I just feel so good after I eat it!
