A lovely day off and post workout breakfast was had! Organic brown egg with 2% shredded cheese and bacon bits sprinkled on top, Fiber One muffin with yogurt butter and jelly, a big cold glass of chocolate milk and a big bowl of fresh fruit. It's probably the oddest combination of fruit I've had at the same time before but I had Halo segments, blueberries, blackberries, strawberries and the last of the green seedless grapes.

We decided to share our love today, so we took our daughter and elderly friend out to brunch at the best bbq place in town! The brisket, tri-tip and mac & cheese were wonderful!

For breakfast I had the special at my Local Joint....
It was a Meditteranean breakfast bowl with a potato pancake in the bottom, smothered with sauteed eggplant, mushrooms and garlicky spinach. I substituted feta for goat's cheese, then on top of that were two pesto fried eggs. Topped with roasted red pepper ailoli and crumbled local sausage that tasted like chorizo.... *big breath* It was a total mouthgasm... And the best local coffee...Dynamite coffee outbof Black Mountain. Made.my.day.week.month!

I had an inspired idea for something other than fried eggs...
I heated some olive oil in the pan, added frozen pepper/onion mix...meanwhile, I mixed 3 eggs with spices and some milk and added it to the peppers in the pan. Scrambked them up good and sprinkled with parmesan cheese...a little smoked chipoltle tabbasco and it was gooood. I had toast with it since I'm out of turkey ham...which....woulda made my scrambled eggs even gooder...

I stopped for a latte at my local coffee shop..got a raspberry white chocolate latte...had skipped brekkie and saw a lovely raspberry shortbread in the bakie case....soo that was breakfast and lunch. It was scrumptious....now I wanna learn to make shortbread....lok
