I had veggies I needed to use up so...
I sauteed some asparagus and mushroom in some olive oil, added a sprinkle of oregano...then cut up some leftover turkey kielbasa. Beat up 4 tiny eggs and added iy in. Topped with some of TJd shaved cheese blend. Wheat toast with blackberry jam on the side. As an aside...the tiny eggs came from my neighbor's tiny chickens...and the jam came from another neighbor. She got the blackberries right here on the property..its rather delightful
