I made a huge roast chicken, so

I will be eating roast chicken for a few meals.

Pete only eats the chicken when she's been smelling it cooking for a few hours, so

I am on my own with this chicken.

So far, I've had it in soup, with yuca, and with eggplant.

Jack is working late again tonight so I'm having a simple salad with hearts of romaine, baby carrots, fat free cheese, a sliver of onion, a sliver of bell pepper, grilled chicken from last night and a lovely chipotle ranch dressing.
