Im not sure yet...although, I'm pretty sure that I'm going with patty melts with sauteed onions and swiss...maybe chips or homemade fries

I layered homemade spaghetti sauce, thinly sliced zucchini, and polenta. I sprinkled the top with shredded mozzarella, grated parmesan, and seasoned bread crumbs.

Kafta meatballs using grass fed ground beef and pork. I made a bunch, so I will have them waiting in the freezer when I want them.
I also cooked pan grilled eggplant and steamed broccoli.

Oh man it was good! Coconut chicken, cooked on the hibachi rice, mushrooms, onions, water chestnuts, zucchini, and sesame chicken and crab Rangoon and a tall glass of iced tea with lemon. Didn't get dessert this time was to stuffed.

We are having my version of a rice bowl from a locally owned restaurant.

We are having quinoa with vegetarian refried beans, avocado, salsa, non fat plain Greek yogurt, shredded mozzarella, and soyrizo, yum.

We are also having my version of a margarita, with one shot of tequila, one shot of triple sec, lime juice, sugar, topped off with lime seltzer, yum yum.

Yesterday evening I was perusing this thread for dinner ideas. This one sounded the best to me because it's easy! So I had a fried egg sandwich and a banana.
