I had a late appointment at the Chiropractor and did not feel like cooking afterwards, so I stopped and got a garlic roasted chicken, and had that along with a green salad and steamed broccoli and carrots.

I finished the broccoli crunch salad. It takes a day or so for the sauce to marinate properly, so it was perfect. I had the last of the Greek pasta salad as well. I had 2 red velvet muffins too. Cuz I could.

Last night:
Chicken curry with small amount of rice.
Tonight:
Chicken curry w/ small amount of rice.

(I made a large amount of chicken curry yesterday-- coconut milk (full fat), several large carrots, 1 medium sweet potato, curry spices, cumin, coriander, s/p, chicken stock, chicken chunkers, onion.... all placed in crock pot, cooked on low 8 hours) SUPER good.
