gren made dinner tonight...

was a medley of veggies (zucchini, cauliflower, broccoli, carrots, spinach, mushrooms) sauteed in garlic and pesto...served over bowtie pasta, topped with feta....garlic bread on the side.

very tasty!

Hi,

it is Sunday and the cooking has begun. I am making beef enchiladas for my lunches next week. I am also making beans and picadillo for breakfast tacos.

I picked up a tube of ginger paste (I've never used paste before so this is going to be fun!) and a package of huge boneless, skinless chicken breasts that were on sale at the market. They are a little less than a pound a piece. $3.24! Manager's special, so that's why they are getting cooked tonight.

I'll probably do a basmati rice and steamed veggie thing with it.

I pan grilled the last of the burger patties I had in the freezer, re-heated the leftover green beans from last night and made a salad of arugula topped with homemade spicy mango/avocado salsa.

I made a southwest twice baked sweet potato with cheese and guacamole...with that I served avocado tomato egg rolls with a cilantro dipping sauce

young blood had a Memphis rub on chicken, with diced potato sauteed in butter, salt and pepper...cheese poppers and cauliflower

I sautéed turkey sausage, sweet onions, cloves of roasted garlic and grated carrots, then added them to a large pan of French lentils and added smoked seasoning for my BBQ'd Lentils dish.

Very yummy (just had supper).
