Boiled some frozen pasta from the freezer. "Best by April 2014". Don't believe that bunk that you'll die if you don't make the cut off date. They found bottled pasta sauce in King Tut's tomb...still tasty.

I tried a healthier, emphasis on the er, side of Chinese take out. I ordered, egg drop soup, steamed dumplings with an awesome ginger sauce on the side for dipping, and steamed chicken and mixed vegetables for the entree. It is all very good, and I will get a couple more meals out it.

Okay so tonight I had a special treat. I didn't cook, my friend did.

We had baked tilapia with a delicious buttery sauce, zucchini with sun dried tomatoes, and a yellow "Nawlins" style rice that was incredible! And fresh squeezed lemonade..mmmm

She outdid herself!

Dinner was yummy!

I made chicken fajitas, ohh so tender, with peppers and onions, and just that right spice, guacamole pico, sour cream. And tortillas. When she gets home, I hope she enjoys it, as much as I did.

This evening I made bacon and egg pie.. Apparently this pie is as common in New Zealand as roast and mashed potatoes is in North America..

I'm making a pork roast in the crock pot with diced green chiles, garlic and green salsa. ONLY and I will have that tonight with steamed veggies and salad. Tomorrow I can shred the leftover pork and make lettuce wraps for her lunch. It's a win-win!
