Tonight's dinner will be some leftover veggie lasagna that I worked on yesterday. That shit came out so yummy I almost had it for breakfast!

I sautéed some onion, garlic, red and yellow peppers, and fire-roasted tomatoes in olive oil and red wine and added some tomato sauce, beef broth, black olives, spinach, and lots of spices. Simmered it down for 5 hours and layered it between wheat lasagna and parmesan cheeses.
Topped it with a bit of pecorino romano, asiago, and nutmeg and baked.

I made lentil stew...

I sauteed mushrooms in coconut oil then added some turkey sausage..added water to the pot and put in the lentils. Added spices and onion soup mix and let it simmer. Added frozen peppers, corn and California mix. I meant to add fresh spinach but forgot.

This was actually for lunch but it was awesome so it was dinner too.
