I'm not sure..... I had fried chicken and Corn-Potato Hash last night.....so I might make an egg soufflé tonight since that's pretty much all I got left in the fridge. I'll Carmelize some onions and garlic too, and stuff it in the middle, as I fold it over in half, when it's done cooking. Toasted whole wheat bread with butter and Raspberry Jam.

I asked the same thing when someone on this site posted they made it for supper! I can't remember who it was??My menopausal brain fog is bad, I apologize! But you just sautéed whatever veggies you got (I used green pepper, onion, garlic) in the pot, pour a can of spaghetti sauce in, add the cooked pasta and stir it all together.

The question should be what didn't I eat today. I had shrimp fettuccine, crab and shrimp stuffed jalapenos, lobster bisque, and a salad. A margarita to drink.

I don't need to eat the rest of the week. Ugh.

So far a piece of sharp cheddar cheese...

I had a black and blue burger from Red Robin today, so that might be it as I'm still full.

I was treated to a free meal at a restaurant I usually can't afford. (A work thing)

I had:

Ham& bean soup, salad, fillet mignon, asparagus, mashed red potatoes, and pumpkin pie.

It was super yummy!

lightly grilled salmon w/ spinach and squash, the salmon came out so perfect w/ a buttery texture but ,no butter added.

I wanted meatloaf and mashed potatoes, but I went off track when I saw the beautiful red peppers. I put them in my basket to make stuffed peppers.

But then....I saw some even better poblano peppers.

And then...lol, still following me???

Stuffed poblano peppers, roasted potato wedges and a small side of coleslaw.

Pumpkin ice cream...it was the best part!
