What's for breakfast today?

Spaghetti with meat sauce and freshly grated Parmesan cheese. Nothing to drink because I had my morning coffee while everything was boiling and simmering away.

We had lunch at a very special restaurant yesterday and I was inspired to make polenta for breakfast.

On top of a bowl of polenta, we had fried eggs and a Morningstar Farms product that smells like bacon. I sprinkled homemade feta cheese on my bowl but Pete can’t eat dairy products.

I will send Pete out later for bulk peanut butter and kale so I can make noodles with tofu and peanut sauce for dinner.

I got into Mexican mama mode and made flour tortillas, chorizo and egg, papitas, refried beans and salsa fresca and of course, cafe (Mexican mocha)...
