I was skeptical until I tried it but I'm finding more and more products making it easier to transition to vegetarian.

FINALLY, a fast food restaurant with some yummy salads! My new favorite...

Almonds, strawberries, blueberries and grilled chicken with a fat-free raspberry vinagrette...OMG!

Last school luncheon (tomorrow faculty and staff go to a Dumbo restaurant for a catered affair with full bar):
gazpacho (homemade)
smoky pork ribs, or bbq chicken, or bbq tofu
baked potatoes, cole slaw, full salad bar with lots of options
roasted tomatoes with mushrooms and leeks (yum)
steamed and sautéed with a bit of butter peapods
home made lemon cheesecake with homemade whipped cream
homemade lemonade and sweet tea

Needless to say, I am not having dinner!

Lunch was pizza, two kinds ~ one was hawaiian, and the other was pepperoni :-)

I HUUUUUUUGE salad of romaine, mixed spring greens, fresh sliced mushrooms, roma tomato, garbanzo beans, feta, kalamata olives, and Caesar vinaigrette. Nummy good.
