Left over BBQ brisket, chopped on top of sourdough bread. I added a piece of provolone cheese and zapped in the micro for a few seconds. The best sandwich for a Monday night!

Casa de Snow is having grilled chicken legs that are seasoned with Cajun whammy and slathered in a spicy bbq sauce. Baked potatoes and fresh green leaf lettuce salad with tomatoes, cucumbers, topped with a roasted garlic ranch style dressing that i made.

I made jambalaya in the slow cooker:
Chicken, diced tomatoes with jalapenos, chicken Andouille sausage (very spicy!) rice, peppers and okra... It came out wicked good. I'm going to freeze the copious leftovers...

Leftovers.
Made this.... and it was wonderful. Though I used boneless and skinless chicken and then grilled it. I enjoyed it with carrots and massaged kale salad. Leftovers were bomb diggity. About massaged kale salad-- makes a huge difference.

(would've had a french loaf, crusty as, fresh from da baker, but am tryin' to reduce me carb intake..). |
