Early in the day, I pureed some Roma tomatoes with onions and Italian seasonings and simmered it for a few hours.

Later, I made a large muffin tin full of muffin meatloaves with garlic, rosemary, onion, red pepper, and fresh spinach in them. Once baked, I spooned some of the sauce over them. I'll be eating good this week.

Had dinner not too long ago. It was rice, sweet and sour fish, Chinese Brussels sprouts, baby bok choi with pork, and fried squid. Washed down with a glass of Chinese tea.

Yummy. Although the bok choi dish was the best.
