Eh. I could have done better but it could have been a lot worse too.

I had the chicken fajitas, loaded potatoes, steak fries and corn with diced bell pepper and sweet red pepper plus fresh pineapple spears. With the exception of the bits of peppers and the sauces (ketchup and 57 sauce), that was all the color in there. Oooopsie.

To be fair, I did have blueberries and yogurt covered pretzels earlier.

Pan grilled rainbow trout, baked sweet potato tots, and a salad with romaine, kale, tomatoes, cukes, sweet onion and yellow bell pepper. This will likely be my dinner tomorrow night as well, because I have plenty of yummy leftovers.

We ordered in from our local Jewish deli & had corned beef & pastrami sandwiches with potato salad and a thick ol slice of brownie. Way to go with my diet... GO ME!

A slice of turkey ham with a sprinkle of parmesan cheese....pickles...tiramisu gelato for dessert (but I ate that and pickles first....no..Im not knocked up)

I had brown rice with chicken fajita strips and broccoli mixed together with a little pineapple juice and I chopped up a pineapple spear and added it in for the fun of it. Then, when I was done being kind of healthy, I had ice cream.

---I am so proud of myself. I just put a frozen chuck roast with lipton onion soup in the crock pot. I will put carrots and potatoes in about and hour. Celery later. This stuff rocks .. I had forgotton all about this dish now that my son lives on mickey ds. But for tonight a large glass of milk and umhum roast beef. Do 17 yr olds realize mickey ds 4xs a day can kill ya? The more I fuss about the fast food the more he eats. letter to self...Pru shut up!

I made spinach enchiladas. Spinach, cilantro, garlic, yellow onion, green chiles, sour cream, queso and cheddar cheese, cumin, chile powder, fresh lime. Topped with avocado and green onion. Yum, yum, yum. I made a bean and rice side. Pineapple nectar for my beverage.
