I had an inspired idea for something other than fried eggs...
I heated some olive oil in the pan, added frozen pepper/onion mix...meanwhile, I mixed 3 eggs with spices and some milk and added it to the peppers in the pan. Scrambked them up good and sprinkled with parmesan cheese...a little smoked chipoltle tabbasco and it was gooood. I had toast with it since I'm out of turkey ham...which....woulda made my scrambled eggs even gooder...
