I sauteed some onion and pepper blend frozen veggies (a staple in my house!) with some cubed turkey ham. Beat the heck out of some eggs...added some spices (TJs 21 season salute specifically) and then added a piece of diced provolone when it was nearly done. Dash(es) of smoky tabasco...it was pretty

I finally made it through the whole container of the eggs that I had to take instead of my favorites. There is apparently no longer an egg shortage so I found my Nellie's and today's eggs were especially delicious because I missed them so much.
I also had bacon jerky and a big bowl of fresh fruit (cutie segments, blueberries, strawberries, cantaloupe and pineapple) with a big glass of chocolate milk to drink. |

I am having 2 organic brown eggs with cracked pepper and a dollop of hickory smoke bbq sauce mixed in, golden kiwi (who knew???), goat cheese with blueberry goo, bacon jerky, chocolate milk and a bow of fresh fruit. Today, it's mango, pineapple and blueberries.

My own version of Ambrosia that's completely within my prescribed low GI, low carb food plan:
Fage 2% Plain Greek Yogurt - small container 1/2 peach chopped 1/2 cup blueberries 2 TBSP unsweetened coconut 1 tsp sugar free vanilla syrup 1/4 cup roasted pecans 1 TBSP heavy cream - optional Mix everything but the pecans together and refrigerate overnight. Add the cream if it seems too thick. Stir in the pecans right before eating. Heaven in a bowl! |
