Dave the lawn man came the other day, and (although he's one that will talk your ear off given half a chance) it feels good to not be sitting here thinking "I need to get that lawn mowed."

Hope you all are having a great weekend! I went shopping yesterday at Talbots and I picked up a cute shirt for $17.03 with tax. I nearly fell over! I also hit Macy's One Day Sale and picked up a few things. I spent almost $41 for everything...

It's lovely weather here in South Florida, and I haven't had the A/C on since sometime last week when the temperature dropped. Right now, the sliding glass doors are open and a nice cool breeze is coming through the house.

Evil kitty (aka Grayson) has been getting up on the roof by climbing a small palm tree at the back of the house. I heard him meowing up there at 10:30 last night and had to get the ladder out to retrieve him. Lucky him....I was headed to bed and he almost had to spend the night up there or (finally) figure his own way down in the dark!

Today is my every other Monday off and it is jam packed full of phone calls and errands. I am looking forward to getting these things done.

The weather here has been great, with no need to run the a/c but we will be journeying to Phoenix again soon and it was still in the high 90's yesterday. Memo to Mother Nature: It is the end of October.....

I had to work from 5:30p to 2am lastnight and I just got into a good deep sleep, when the apartment complex and fire marshall set off the fire alarms to test them....I got about five hours of sleep and I am exhausted...

She graduated before I did and I lost her phone number when Apple had to replace my iPhone. I almost knocked her down when I gave her a hug...She is gay as well and she kept pushing me further out of the closet and I thank her for that.

I had an incredibly busy weekend, but managed to accomplish a fair amount. Still need to finish painting the other bedroom, but we're about halfway through the first coat (always slower)...and will get it all done as we get through this week. By next weekend we should be ready to move things in. Rooster picked a Caribbean blue....brighter than I would have picked, but I think it's going to look very nice with bright white trim.

It's raining again today...nice for the lawn and plants...but heard on the radio this morning that we're officially in the dry season, so to enjoy it while we can. I'm still learning about Florida seasons, I can tell!

Yesterday was my supervisor's birthday and someone brought her in a cake. The gay guy that I work with cracked off a lesbian joke lastnight after my supervisor left, so I took and ran my finger threw the icing and tapped him on the shoulder. When he turned around, I smeared the icing on his face, hehe..Needless to say, the boy didn't know what to do other than giggle.

Feels good to be home after 4 days of training....now I get to enjoy the weekend, do a little more work, and head out at the crack of dawn Monday to go to HQ for a few days. I'll be glad when these trips are over. It's for a good cause...getting new credentials in my profession, but it's a lot of traveling for me...and Scoote is doing double duty taking care of her household and mine while I'm gone.

I had a blast at Pride yesterday and I met some wonderful people! We had to take Ruff's phone from hym..Hy kept taking pictures of everyone and everything..When hym and I left Starbucks, a spider hitched a ride and as we were driving back to my apartment, I felt the nasty little thing crawling on me. I almost jumped right into Ruff's lap and screamed truly like a girl..Hy didn't believe me and when I put my stuff down at home, I started screaming again...Hym and my roommate's friend was, like what is wrong? I looked at Ruff, and said, told you there was a spider on me! The sucker was hanging out on my wall and I ended up killing it...:praying:

i've missed this thread !
i am actually OFF this weekend, and off Wednesday and Thursday too.
Looking forward to the relax time, before Christmas week at work gears up.
Sadly, we have some cases of Norwalk Virus at work, and a case of C-Diff..
For the passed 2 years the nursing home has been closed to visitors through Christmas, which is so sad for the residents but necessary to prevent it from spreading around..

So hope this passes quick so they can still have Christmas visitors this year!

Been caretaking/staying with my Ex of 21 years who was recently diagnosed with COPD and emphesema. Oxygen deprivation, some memory loss seems to be serious memory loss as time goes on. Here, then heading to my house 20 miles away , then to work. then home to feed my 2 felines, then here to check on her and her puddy kat. Hoping for the best and realllly looking forward to some really good coffee. she doesn't have cable and att & t is kinda slow.

i haven't been in for the last couple of days for obvious reasons..
my travel day was, well.. LONG.. lol.
i sat in LAX for 12 hours, and oh the joys..
Mr Mtn kept me company the whole entire time, thank goodness for technology.

No incidents this time though, last time there was a security incident with 3 guys that scared the heck out of me, lol. i found the quietest part of the airport and sat there, walked lots, took some pictures, found meals at mealtime but mostly, just stayed in that quiet area and found ways to pass the time..

The travels went pretty well though, customs and TSA were more than pleasant, i think we're becoming good friends (lol) i had to pass through so many detectors and got so many pat downs, it's hard not to establish a friendship at some point, no? heh.. kidding.. kinda.

Anyway, i'm really sad, i miss Mr Mtn alot, the puppy too.. i will focus on the positives, until i am back there again in August.. That helps us tremendously, LDR's are so difficult.. i can't wait until it's no longer an LDR, but til then we make the most of really what is a great thing.. And He is worth every bit of travelling, pat down and airport layovers, seriously love that Guy with all my heart ♥ Home is when We are together, indeed..

& Yesterday, was rest catch up day, i was awake for over 24 hours and i crashed once i walked in the doors.. So glad i have today off as well.

It really has been a good move for me. I am amazed at how wonderful it feels to finally let go of stress I have been hanging onto for 8 years.

2 Lb Rigatoni or Ziti
2 tablespoons Extra Virgin Olive Oil

DOUGH:

2 1/2 cups All-Purpose Flour
6 oz Lard (can use Butter or Vegetable Shortening)
4 Egg Yolks
1/2 teaspoon Kosher Salt
1 teaspoon Ice Water
2 tablespoons Unsalted Butter
1 1/2 cups Toasted Bread Crumbs

FOR THE ASSEMBLY:

1 Recipe Ragu Napoletano
2 cups Freshly Grated Parmigiano-Reggiano
1 Recipe Besciamella Sauce
1/2 Lb Proscuitto Crudo (cut into 1/4-inch dice)
Several Gratings Nutmeg
1 Recipe Polpette alla Napoletana

RAGU NAPOLETANO:

1/4 cup Extra-Virgin Olive Oil
1/2 Lb Boneless Veal Shoulder (cut into chunks)
1/2 Lb Boneless Beef Chuck (cut into chunks)
Kosher Salt
Freshly Ground Black Pepper
1 Onion (finely chopped)
3/4 cup Dry White Wine
2 28-oz can Peeled Plum Tomatoes and Juice (passed through a food mill)
1/2 Lb Sweet Italian Sausage
Pinch Red Pepper Flakes

BESCIAMELLA SAUCE:

5 tablespoons Unsalted Butter
1/4 cup Flour

2 teaspoons Kosher Salt

instructions Place the flour on a wooden work surface and make a well in the top. Cut the lard into 1/2-inch pieces and place in the center of the well with the yolks, 1/2 teaspoon salt, and a teaspoon of ice water. Mix well with the tips of your fingers to form a lumpy mass. Bring together as a dough and knead for 4 to 5 minutes. Wrap in plastic and set aside.

instructionsFor the ragu, season and sear beef and veal in olive oil on medium until dark golden brown. Remove to a plate and repeat, searing 5-6 chunks at a time. Add onion and sautee, scraping brown bits off the bottom of the pan. Cook until the onions are golden brown and very soft (about 10 minutes). Add wine, browned meat chunks, tomatoes, sausages, and pepper flakes. Bring to a boil. Reduce heat to a simmer and cook 2.5-3 hours, stirring occasionally and skimming off fat as necessary. Remove meat and sausages from sauce and save. Season sauce to taste.

2 teaspoons Kosher Salt
Grated Nutmeg

instructionsFor the bechamel, heat butter in medium sauce pan until melted. Add flour and stir until smooth. Cook over medium heat until light golden brown, about 6-7 minutes. Heat the milk in a seperate pan until it's just about to boil. Add milk to the butter mixture 1 cup at a time, whisking continuously until very smooth. Bring to a boil and cook for 30 seconds. Remove from heat and season with salt and nutmeg.

4 Garlic Cloves (thinly sliced)
1/4 cup Extra-Virgin Olive Oil
3 tablespoons Chopped Fresh Thyme
1/2 Carrot (finely shredded)
2 28-0z cans Peeled Whole Tomatoes (crushed by hand and juices reserved)
Kosher Salt

instructionsFor basic tomato sauce, cook garlic and onion in oil on medium until light golden brown. Add thyme and carrot and cook for 5 minutes, until the carrot is quite soft. Add tomatoes and juice and bring to a boil. Lower heat and simmer for 30 minutes, or until sauce is thick. Season with salt.

Combine bread with beef, eggs, garlic, pecorino, parlsey, pine nuts, salt and pepper. Mix to incorporate. Form the mixture into 12-15 balls. Heat oil in a large, heavy-bottomed skillet. Add meatballs in batches, cooking until golden brown on all sides. Add tomato sauce and simmer for 30 minutes until balls are cooked.

instructions Mix half of the cooked rigatoni with 2 1/2 cups meat sauce and 1/2 cup of Parmigiano. Mix the remaining rigatoni with 1/2 the beciamella, 1/4 cup parmigiano, prosciutto, and nutmeg. Place the creamed rigatoni into the bowl and press lightly. Sprinkle with more grated Parmigiano. Arrange the meatballs on top in an even layer and press down carefully. Sprinkle with more Parmigiano. Spread the meat-sauced pasta over the meatballs and press down gently.

1/3 cup Key Lime Juice
Zest of 3 Key Limes
3 cup Greek Yogurt
1 tablespoon Vanilla Extract
3 tablespoon Honey

Zest of 2 Key Limes
3 cup Greek Yogurt

Combine the honey, yogurt, the zest of 2 limes, lime juice, vanilla extract and 1/2 cup of graham crackers in the bowl of an electric mixer. Beat at medium-high speed until smooth and creamy.


Zest of 1 Key Lime
1/2 cup Crushed Graham Crackers

Arrange 8 disposable cups. Combine zest of 1 lime and 1/2 cup graham crackers, and divide evenly on the bottom of each cup.


Pour an equal amount of the yogurt mixture into each cup, each about 3/4 full. Insert popsicle sticks. Freeze for at least 2 hours, until set.

i worked this morning, back to work this evening..
getting ready to go out for a walk, just waiting to get some lunch into me..
And working on a little crafty project (making suggestion boxes and prettying them up) for work.. i'm starting a weight loss support group and so putting the boxes in the staff lounges , first group together is May 2nd, how exciting!

One box is pink and one is blue.. (i love pastel colors) .. prettied them up and worked on them with my daughter.. We rocked the boxes, hehe..

Whatcha's all up toooo ? What's for lunch today? & dinner tonight (since breakfast has passed..) And who wants coffee? i don't drink it, so i can make & serve it.. heh

Just got home from work (7-10 shift)
Now i go back for a 130-7 shift.. This is the split i hate, i'd rather work a 12 or 14 hour day, lol.

No seriously.. :|

It's been such a busy couple of weeks for my Honey & i..
He started back at work and it's of course busy, busy, busy and lotsa hours..
Then work in *my* crazy work schedule, where my shift changes everyday..
Add a 4 hour time difference between Us in that mix..

But We still make the best of every single day, and grab at every chance to spend time together, which i'm so grateful for.. Keeps us positive.. & always something to look forward to at the end of a day...

Drinking an ice cold water right now, contemplating lunch before i go back to work. Thinking a lobster roll and nice big spinach salad with feta cheese, yum!!

i had a really, really bad nightmare, and just woke up.. ick..
i still have incredible pain (pulled a muscle , would love to say my back but no, it's my bum lol) and am on painkillers right now.. they make me sick to my tummy and so unbalanced (light headed & dizzy).. Doesn't take my pain away, but helps me tolerate sitting and laying down some..

i am stubborn, and pushed myself walking last night, not a good decision syl.. *shakes head* i felt great walking, i think it was climbing in and out of her vehicle which made it worse..

Anyway, thought i would pop in for breakfast & say hello..
i am going to make an egg white omelette for breakfast, lotsa veggies & some mixed fruit on the side (watermelon, grapes & strawberries)..

And a big side order of ibuprofen, since these advil 400 are doing nothing cept making me loopy and sick, lol..

Coffee out for you all.. Fruit, and whatever your lil hearts desire!

& i love You & a cuppa coffee for You when You wake Mr Mtn, *because i know You'll see this eventually when You stalk me, hehe..*

So I watched the show "Kim & Kourtney in Miami" last night and Khloe was on there buzzing around town in the wee hours of the morning like a crazy person looking for her "FIX" of a cuban coffee called a "Cordita." Now I MUST try to find one!!! She became addicted overnight!!! It was truly a problem for her. I just don't know where I can get a sample of this delight in Texas..
