Fried chicken made with cassava flour in the air fryer. One of the better cooks at work made this. I didn’t have good luck with my air fryer and sold it, but I expect this will be tasty.

I'm in the middle of simmering some homemade, from scratch spaghetti sauce with meat, and boiling some gluten free spaghetti made from corn which I think tastes a lot better and holds up better than any of the rice ones I've tried. I'll have a small side salad and milk to go along with.

Last night was stir fry veggies, with bok choy, snow peas and various other good stuff. I added some Thai peanut sauce and spicy sausage. That sauce will be addicting, glad I have more.

I've been creating a homemade soup for supper tonight: It's a clear broth soup with organic vegetables (carrots, cauliflower, celery, a tiny clover or two of garlic, and tiny broccoli buds). I might have a few seeded cracker's with a bit of organic, freshly ground peanut butter too.

As always, water to drink and a cup of hot herbal tea, after supper.

I had a sandwich with multigrain bread, spicy brown mustard, Swiss cheese and honey ham. With that, I also had Cool Ranch Doritos that I mushed in the sandwich for a satisfying crunch and a Pink Lady apple. I had an oj/pom cocktail with a water chaser and a piece of Boston cream cake and then a little bit of purple potamus ice cream. Why, yes....I am hormonal. :|

Homemade chicken fajitas, sort of, pretty close couldn't get the spices just right. Corn instead of flour tortillas, sour cream and homemade guacamole. Refried beans and mixture of sweet corn with red bell pepper for sides. Drink yet to be determined. Probably water and then latter some Mexican hot chocolate for dessert.

I had lentil soup with whole grain naan sprinkled with this delicious shredded cheese I found and toasted. It's Taco Bell's brand and it's a blend with smoked bacon flavoring. I tore the naan and rolled each section up with the cheese inside and dipped it into the soup. Delish! With that, I had a small Pink Lady apple and a Halo. Water to drink and then I had some conversation hearts for dessert.

Just put an assortment of vegetables on to roast in the oven, for an early supper today: Wedges of green cabbage, baby red potatoes (two or three), baby zucchini, a small apple (quartered), carrot chips, and two spicy black bean Chipolte meatless meat patties (all organic, non-gmo foods).

For dessert: I plan to set aside the baked apple quarters and sprinkle a touch of cinnamon on them and call it dessert.

Water to drink.

Campbell's Chunky Savory Chicken with White & Wild Rice Soup. Water to drink and a no sugar added popsicle for dessert. I've got a bit of a cold, sore throat and wasn't up for cooking or anything heavy so my son brought me a care package. Lots of different types of soup, sugar free fudge pops, sugar free popsicles. His ex would have hated that and went on at him for hours about how I should get my own stuff “she's an adult”, he should spend at least as much money on her as he spent on me if not more (um my son has yet to buy me a car and he bought her two so complete lies) and - I don't believe you were really at your mother's because what kind of man spends that much time with his mother. What's wrong with you? Who are you sleeping with, what's her name? You don't have another girlfriend? Why are you gay? However J is super sweet and if my son sends a few cans of soup my way she doesn't flip out. She looks at my son and says – What you didn't get her any crackers? Well you should go back and get some. Well you like crackers with your soup don't you? Well then... :)

I just made myself dairy-free potato soup. It's my first time, and it was a success. It's actually really tasty! I crumbled some crispy turkey bacon over the top, so it's extra tasty.

I still can't believe it was a success. Yay for me!

It's been taco salad for me the past couple of nights. I took meatless chorizo and meatless beef crumble and mixed it with the usual suspects....lettuce, salsa, light sour cream, shredded cheese, sauce....plus toasted hard shells. My tacos always wind up a mess of sauce and broken bits in my plate at the end so I decided to cut out the middle man and just broke them up in the bowl and called it a salad. Water to drink and something sweet each night for dessert and it was good.

My soup is a meatless version, using alternative meatless products, organic vegetables and it's in a clear coconut broth soup base, seasoned lightly with Tamari sauce, peppercorns and a few tiny cloves of garlic.

That sounds delish! How well do the meatless products hold up in a soup? Does it remain more or less intact, or dissolve into mush? Which one are you using?

I wondered that too when I read Katz' post. I do know that meatless crumbles do very well in taco salad and I tend to make mine very moisture heavy (lots of sour cream, salsa, taco sauce, etc) but I've never used them in a stew or soup.

Tonight, I had turkey smoked sausage with basmati rice and steamed peppers and onions as well as Cheesecake Factory rolls with yogurt butter, water and leftover mini Valentine's baggies of Skittles.

I was going to have clam chowder in recognition of National Clam Chowder Day but I didn't feel like it. I already had some last week anyway. My celebration has come, gone and has probably already passed through the local water treatment plant by now.

I typically use the organic Tempe: I wait until the soup is finished simmering, so the vegetables are tender; then I pan sear the Tempe in EVOO, then add it at the last minute. Just enough for one serving of soup. It's like a last minute add-on.

My appetite has been way down, due to lots of stuff going on in my own family and due to the crisis going down among the ranks of people elected to serve the country and the best interests of us all. It's so hard to believe what's going on, but …. anyhooo …. I have not had much of an appetite.

Today, I basically kept hydrated with water and survived on protein-based protein powder smoothies made with blue berries, bananas and a splash of almond milk, etc.

Hope I'm not coming down sick.... I've felt something nudging my system all week long. Keeping my fingers crossed, that I will feel better soon. :rrose:

haven't eaten all day until tonight ... now at 10:45 p.m.

just made scrambled eggs and grits with strawberry milk to drink

it is delicious

forgot to eat tiny bites and eat slowly ... blew my first bite (it was a normal size - probably too large for most folk) ... anyway, drank a slug of Pepto ... now eating the tiny bites and all is well with a sip of water every so often

taking all these new medications gives me horrible heartburn ... also, if I take a swallow of anything before 2 hours after the meds, I get huge hiccups along with heartburn ... my life has turned into a train wreck LOL! ... always look for the humor, it's there! :)

Kids invited me over for dinner and a movie. J made this really great dish, I'm not sure what it's called but it had chicken breast medallions in a sort of Asian Fusion type of ginger soy sauce blend. Around the chicken there were mixed roasted vegetables, red and yellow bell peppers, broccoli, asparagus... all sorts of things which didn't seem like they'd go together very well but amazingly did. The sauce sort of pulled it all together made it work. I'm not sure what type of rice it was, something I'd never had before but it was seasoned nicely. I don't know that I'd pair it with anything I'd make but along with this particular dish it worked well. Water, milk to drink. Tea would have been nice but wasn't offered and well when you're an invited guest, even if you are mom, still it's nice to be polite. I want them to enjoy having me over, not dread it. No dessert because they're both trying to make better food choices. That's okay, now back home I'm having a cup of coffee with a splash of milk and a couple of Lofthouse, St. Patrick's Day color scheme, themed soft sugar cookies. I'd better be careful and pace myself or I'll have the entire box polished off before end of tomorrow, they're so good. They invited me over again next week for dinner and a movie. Lucky me :)

Let's see ... I had a can of Dinty Moore Beef Stew. I was about to prepare a bologna sandwich and then thought the stew would be better. After all the gosh awful tornados this past Sunday, it has gotten very cold. Warm stew was the ticket tonight.

Those tornados killed some 23 people less than an hour east of us. Poor Kevin got so shook up, he cried out loud. I held him and comforted him as best as I could. Dogs can feel when the barometric pressure suddenly drops quickly. All of them were walking all over the bed, so nervous. Since it was a county away and we did not get a warning, I saw no reason to stuff them in the master bedroom's bathroom but it did get rough for awhile. For sure, I was tuned in to the weather station in case we needed to go to the safe hole.

I ate everything and the kitchen sink tonight. I started with dinosaur shaped chicken nuggets with sweet and sour sauce and oj then graduated to Skittles and then I got tired of that pretty quickly so I dug into some fresh fruit (melon, pineapple, blueberries, grapes and watermelon). That was fine for a while until I peeked I the freezer and got out the ice cream. Water to drink with that.

I might have a tapeworm.

Yes, just east a county over not counting that thin piece of Tallapoosa county. I think it was ramping up even stronger when it passed underneath us because Montgomery County received a warning but people at work said nothing much happened there.

Those poor people in Lee County only had nine minutes to get to a safe place. Nine minutes was from the time the tornado warning went off to the time it arrived. It was a monster in strength and width. And for instance, if someone was napping with the tv on loud, well pretty sad. I have deep respect for tornadoes and the warning sirens which indicate one is on the ground nearby.

It definitely scared all my babies but it broke my heart to hear Big Kevie crying. I mean I really hugged up on him. I have often wondered if he has extra senses for tornadoes.

I never have to plead to get Kevin into our safe place. I have tons of pillows, comforters and a couple of large bolster pillows in there too. They are pretty hard. Kevin goes straight to the closet with Jennifer following his heels. I cover them well with pillows, then a bolster, more pillows and comforters on top I had drag Jeffrey in there in January. Eventually had to put him in the tub, get on top of him and cover us up as well. It will take Jeffrey a few more times I think to catch on.

Something sort of funny .. back in the 90s, I had five dogs. I declared one room of my home the safe room. I pulled a king size very heavy mattress in there and sort of had part of it propped on a wall. We had rehearsals. I would yell, "Fire Drill" then clap my hands and all of them would go jump in "the hole." I made it a fun activity for them so there would not ever be any hesitation.

I had one very large and very well nourished mixed breed, loved her dearly, who was just like Kevie ... she had frequent rotton boiled eggs gas attacks which were purely awful. This one time during a real deal, she had an industrial gas attack ... it was all I could do to hold on to the ropes I had tied to the mattress and make the other four stay in the safe hole. They were coughing and gagging. LOL! Heck, I was too but nobody got to leave until it was safe. I will never forget the memory.

The other day we had dinner for the first time from Pei Wei (P.F.Changs fast food), and it was pretty good!

Instead of steamed rice ( which is horrible for a diabetic), I had riced cauliflower as the base of my dinner bowl. I would probably have it again, but in a bowl with other types of veggies it was a bit watery. So if you can get past that, it almost fools you into believing you were not deprived of that fluffy white goodness.

It's officially the Salad Season, now. *LOL*

I'm feasting on a gigantic Super-greens salad, complete with other vegan elements, like … mushrooms, zucchini, cauliflower, berries, carrots, and such. My salad dressing will be a slight drizzle of balsamic dressing or a mandarin orange type dressing. Topped off with sesame seed tahini cracker type salad toppers.


Dessert will most likely either be peanut butter stuffed celery sticks or a small bowl of cantaloupe or watermelon or cubed mango fruit.

We made sailboats! Flip the pear half so the cut side is up, fill the hole up with cottage cheese, and sprinkle with cheddar cheese. Then my job was to make the sails with crayons, paper and toothpicks.

This was my mom as well. I once fell asleep at the table, I'd been sitting there so long. To this day, I still won't eat liver and onions. Blech!

I had multigrain chips, guac and pico de gallo last night followed by ice cream and washed down with water.

My mom placed a lettuce leaf on a small plate, placed pear halves, cut side up, put a teaspoon of mayo in the hole, sprinkled shredded cheddar cheese on that & placed a maraschino cherry on top of that. To this day, I still do that, and I still LOVE it!! Thanks for the walk down memory lane, Mopsie!

I had Green Giant's Steamer Rice Pilaf in a Light Sauce. I added a bit of bone broth to it and some bacon cheddar crisps crumbled on top, cranberry juice and peach rings.

couple slices of DiGiorno all meat pizza. Our mgr. got 2 large ones & made them for us today. So I got some for dinner, when I got back from my infusion therapy!

I haven't gotten that far. If it were up to Pete..it would be snacks in bed all day. BUT I have to adult today so, I am completely open for suggestions!!

HAHA. I think after that night of MASSIVE chili making (two kinds mind you) I think I broke my taste for chili...which i usually am a HUGE fan of comfort foods.

Maybe I'll make potato salad! haha another nice comfort food

Golden Corral early dinner buffet.....I had a small piece of fish, and small portions (tsp sized) black eyed peas, brussles, smashed potatoes & gravy, calabash shrimp, & butterflied shrimp. For dessert a tiny square of fudge & a small slice coconut cream pie...:)............now to watch Grey's Anatomy, Station 19, and to bed early tonight...:)

I toasted my bread in the oven and made a tuna fish sandwich to which I added dill pickle chips and I had an oj/pom cocktail plus dessert popcorn and rainbow sherbet. Water to drink after the juice was gone.

I had little snacky things for dinner, too - some mixed olives, ham salad on little crackers, some deliciously runny brie on the same crackers, some beautiful red seedless grapes, tiny roast beef sandwiches with remoulade sauce.

I had two small Pink Lady apples schmeared with reduced fat peanut butter and a scoop of tuna fish, a few swigs of pomegranate cherry juice followed by water and the last of the rainbow sherbet and the cranberry fancy cookies.

I smeared a little mayo on 3 slices of bread, sprinkled schredded cheddar cheese on top and nuked the paper plate ... small chocolate milk to drink. I made the 3rd one for the babies. They would have been broken-hearted when they smelled the cheese and did not get any. I have not much yearning for food lately and that is not like me. All I ate today was a honey bun and small milk this morning. I really did not want any dinner but got up out of bed and made the open-faced cheese sandwiches. Thought I should eat. My jeans went to the ground out in the backyard today. And there I thought that belt was notched up good and tight.

J took me out to lunch today and I had this huge chicken, bacon, avocado wrap with two kinds of lettuce, three types of cheese, tomato and ranch dressing. As a side tater tots with some sort of seasoning, not sure what but very tasty. Two huge cups of coffee with fresh cream. I could only eat half the wrap because it was huge. I didn't even know they made wraps this big anywhere on the face of the planet because this one was bigger than any I've ever seen, even in California. The wraps in Southern California are massive, people take their wraps pretty seriously down there. Anyhow since I had half left over and wraps don't keep all that well I had that for dinner. J didn't eat her fries so she sent them home with me and I had those. And then I had some fresh blueberries with milk mixed with a little cream for dessert. I am so stuffed!

I ordered boudin balls..I ate two, brought one home..um lunch tomorrow.
I also had two grilled fish tacos..I just ate the insides!
I loved the street corn..omg

And water with lemon.

I came home and had coconut chips, so good.

Not hungry tonight but I had a footlong veggie and cheese subway for breakfast around 9:00 a.m. ... loaded with bell pepper, tomato slices, spinach, dill pickles, jalapenos and lettuce with honey mustard.

Making sure not to miss vitamins until my lust for food returns. I don't know what this is about. I had a great day today ... I almost didn't know how to act LOL ...the pain was manageable until around 2:30 ... I was so blessed to catch a break! :)

It was supposed to be stuffed peppers but then I caught the stove on fire while browning up some hamburger. I don't want to clean that mess up yet so I'm thinking maybe just cold cereal.

Given the same situation, that sounds exactly what I would have done! :)

I am eating right now. At first I was not going to because I forgot to buy paper bowls. Then I decided to go ahead and nuke a can of Campbell's Spaghetti O's in a regular bowl. I have not had them in forever ... they are really good!

Have you seen the "Throwback Spaghetti O's" and "Throwback Ravioli" from Chef-BoyArDee at the grocery store? It's supposed to be the original recipe. I watched a YouTube review from someone who said you can really tell the difference, and that flavor he remembered from childhood was there. I'm going to have to try it. I used to love ravioli.
