I love how easy this meal is and always good. Sometimes I get too caught up in making vegetable dishes that take too long and are harder to digest. This meal is my fun work day meal.

A glass of water and a small glass of mango pureed type juice.

A whole pint of Toasted Coconut Silk non-dairy ice cream.

And, a piece of gingered candy (it's chewy, and made of ginger).

I had to drive 1/2 hour each way through road construction, a blizzard, and .... lol. I had to drive 1/2 hour each way to pick up groceries and I didn’t feel like cooking.:blink:

a handful of homemade Rosemary & Elephant Garlic crackers.... with a side of melted Chao Field Roast cheese, coconut oil and hummus (my version of a fondue type cracker dip). Celery sticks, a few tiny broccoli buds, and a swig or two of pureed mango type juice. Chilled spring water over sliced up lemons (to drink).

I went with BB to the movies. We saw Ma (loved it- horror fan in da house!).

So my dinner was at the movie theater and consisted of (hidden in my backpack) a Vegan Vanilla Rawmantic bar and lots of popcorn!

Hard candy --->>> Five Flavor Lifesavers. I like to cure them before I eat them. Bought a five pound bag a few months ago, stuck the bag in a hot dark closet. Pulled them out today. They are perfectly cured ... soft and a bit chewy.

I'll be cooking dinner for my parents tonight. My father is having a really hard day- first father's day without his son. He also has diverticulitis that developed earlier this week so he's on a super limited diet. I'm making him a pasta/tuna salad and chicken breast grilled with lemon and salt. I'll put together a salad for my mom and I.

I grazed dinner over a few hours from like, 3pm to 8pm.

I had a couple of mozzarella sticks around 3pm.

A few hours later I had some chips and salsa and fresh picked strawberries.

A few hours later I had a fake BLT (Tempeh bacon)

I am satisfied.

Gosh, everyone's dinner ideas sound so good. I didn't eat much today, but I just started craving Heinz 57 steak sauce, moments ago. LOL, I should go find something to eat. Most likely it will be meatless vegan meat-balls, and a splash of that Heinz 57 steak sauce. A-1 steak sauce would be better tho.

Have you ever mixed the two? It's delicious! They even make a Heinz (https://www.amazon.com/Heinz-Steak-Perrins-Worcestershire-Bottle/dp/B00JDX4ZQU/ref=pd_lpo_sbs_325_t_2?_encoding=UTF8&psc=1&refRID=N514N1F2XMDV0P4P1VGC) that tastes like the two together if you don't want to mix them yourself.

My stomach is really appreciating me going easy on the amount of raw veggies I have at night. Also, I'm loving not cooking- got all that I ate for this meal from the health food store.

I had a "Latin" veggie burger on a bed of wild rice and beans, broccoli and water and 2 small root beer floats to drink. I say Latin in quotes because the box said Latin and other than extra beans and sweet potato, there's not much Latin flavor to it. No spice at all! I was disappointed so I've had to jazz it up with sauces or Pepper Jack cheese or jalapeno juice. Once it's jazzed up a bit, it's okay, though.

I took naan and loaded it with honey ham, Swiss cheese, dill pickle chips and spicy brown mustard and then toasted it. I also had a smidge of mustard potato salad, coconut almond chocolate ice cream, an Arnold Palmer and water to drink and followed that up with a giant lolly.

All day today I had to treat myself like I would a toddler in regards to food. Just put stuff out so I take a bite when I walk by but never sit down to eat. I don't know if I had a "dinner" but over the past six hours I grazed some cauliflower crust pizza, salad, and pears.

Stir fried vegetables with prawns mixed in, a whole bunch of them to keep me from missing the rice I won't be having as a side dish. J gave me a huge super size bag she picked up at Costco because she knows how much I like them. She's such a kind and thoughtful person. Anyhow along with that I'll be having some green tea, orange flavored sparkling water and an Outshine no sugar added orange flavored fruit juice bar. Monte will beg for a bit of the prawns, I'll give him a tiny piece. He'll chew it up and spit it out. As if to say – Every now and then I just need to check in and make sure you're still willing to indulge my every need. Now that I see you are, my work is done. Here you can have it back. Gee thanks son.

I cooked a small pan of Farrow & Quinoa and added orgainic slices of carrots and organic precooked pinto beans, then simmered it in Ginger Sesame Seed Teriaki sauce. I made enough to last a week. What i do is make small organic green side salads and ladle a big serving spoon of the Teriaki Farrow & Quinoa mix on the side. My homemade "bento" box lunch or supper. Its pretty tasty.

For supper tonight, i cut a peice of Garlic Nan bread in half, and spread Cherry-Raspberry jam on top, with organic Aragula on top of that, for an open face sandwich. I can only have one half-slice of Nan per week.

It will be a few months before i can indulge in Nan again tho. Nan is a bread of sorts, so im sinning this week. *lol* :|

Anyway tonight the tofu "egg" salad had started to go bad in that subtle way where you consciously acknowledge that fact when you're almost done. Ugh! What's annoying is that the expiration date was still five days away! I hate how stores sell products that you have to get right when they are made because they overextend the expiration dates.

Afterwards I had popcorn. I always love popcorn.

Then I had a Rawmantic vanilla vegan bar. I am hopelessly obsessed.

Then I had fake bacon.

Tonight was pickles and tofu "egg" salad.

A friend of mine used to make tofu egg salad and sell it to health food stores all over the west coast. Beyond the spice blend I do know that she has a trick to get the tofu texture interesting. She froze the tofu before crumbling and adding spices. I thought it was fabulous!

My dinner was not nearly as creative, just a salad with Pear Vinaigrette and some hibiscus tea. My summer thing is to make a really big salad with non wet ingredients, enough to last 3-4 days. Then, grab THAT when I feel snaky and too lazy to cook. I put different things on top to make it more interesting. Pumpkin seeds or any nuts, dried fruit, fresh fruit (melon is yummy) and being an omnivore different meats. Chewy, crunchy easy and filling :)

I bought an electric skillet to use until my new cooktop is installed. (*weeps at the expense*)

So I stir fried some chicken thighs with shredded cabbage, carrots, celery, and green onions. Just soy sauce to flavor it. Was good.

Later, I'll finish off the remainder of a pint of Halo Top ice cream. Peanut Butter Cup is the flavor. I highly recommend it for low carbers.

When the chicken was cooked I added in a bag of frozen corn and a can of black beans. Easy peasy!

It makes an excellent taco/burrito but I just had it in a bowl. I so wished I had thought to get a can of green chilies; the picante was mild and I love a little spice. I DID add cumin, garlic seasoning and black pepper. Yumminess

I made Stuffed Wontons out of caramelized shredded sweet onions and carrots and used Trader Joe's Sweet Chili Veggie burger patties, for a meat substitute. I pan seared the stuffed wonton's in coconut oil, then baked them off in the oven. And, I used Vegan Miso dressing, for a wonton dip. Delicious and satisfying, for sure.

Salted Caramel Truffle non-dairy ice cream for dessert.

Room temperature water to drink.

Maybe a cup of herbal tea, before bedtime.

I will be happy to give you the recipe! It is my mother's.

5 pounds yellow (crookneck or straightneck) squash (you can also throw in some zucchini if you don't have enough yellow)
1 sweet onion (Vidalia or Texas type)
3 Tbls. Butter or margarine
2 slices bread
8 oz. shredded cheddar cheese (cheese is optional, or you can use less if you want)
salt (less if you use cheese, more if you don't)
black pepper - as much as you like
4 eggs

Chop and steam the squash and onions together in a small amount of water. Drain, but do not drain dry - leave some liquid. Add butter to melt, and bread to get soggy. Mash squash mixture until bread is thoroughly mixed throughout and you can't see any bread lumps. Squash will still be kind of lumpy, this is fine. (If you want a finer texture, blend the mixture with beaters until as smooth as possible.) Mix in cheese, salt and pepper.

In a separate bowl, beat eggs. Add a small amount of squash mixture to eggs and beat to temper them so they won't cook when adding to the squash mixture. Do this a couple more times. Then pour the eggs into the squash mixture, and mix everything together.

Spray a 2 quart or 9 x 13 casserole dish with Pam. Pour in squash mixture. Bake at 350 until golden brown and souffle is set, about 45 minutes to an hour.

There is a nukable spicy vegan thai noodles dinner in the freezer but if I eat spicy this late and go to bed, I will have horrible nightmares ... plus all the thrashing around I do scares the dogs to death. I know because when I finally am able to wake up, all of them are up against the wall looking at me bug-eyed. :( Have frightened some women over the years too.

I always search the *soon to expire* protein section and found a 4# prime/rib roast for $9!

Mixed a rub of fresh ground garlic, fresh ground onion, cracked black pepper, fresh thyme, fresh parsley, dash of poultry seasoning and a dash of sea salt. Tossed together in a ziplock bag and refrigerated for 18hrs. Cooked it in the crock pot for 12hrs on low heat with no additional seasonings, (only moisture was a 1/4 cup of water from rinsing the zip lock).

Fresh from the bakery french baguette and home grown Heirloom tomato as sides-

Tonight I had the salad I've been into lately: vine ripe tomatoes, artichoke hearts, hearts of palm, salt, pepper, garlic, balsamic vinegar, and lots of fresh basil. It hit the spot as usual. I had leftovers which I will try to have tomorrow but it's kind of not as good the next day.

I also had a bowl of black bean soup with sour cream, cilantro, and onions.

I had Greek yogurt with banana, raspberries, cinnamon, and kamut puffs for dessert.

It was all very tasty.

Tonight I was able to eat what I cooked, though it was super bland. I tried my new Gochujang sauce recommended by Georgia Ma'am. But I botched how I used it. Into a big wok I threw a bag of spinach, a bag of riced cauliflower, a block of tofu, a big onion, curry powder, and 2 tbs of Gochujang. Then I cooked it. I think maybe I should have dry cooked the meal without the sauce and then added it. The veggies and tofu are so watery when they cook that they probably ended up making everything steamed as well as watering down the Gochujang, leaving me with a filling but boring tasting meal. If anyone has suggestions other than what I just said, please let me know :praying:

Marinate the tofu in the sauce rather than putting it on everything. Either bake to crisp the tofu or saute til crispy, and then add to sauteed veggies.(stick with riced cauliflower, onion and spinach and maybe add red pepper, but not in the beginning so it retains some crunch) No curry. If you like pineapple, put that in and some juice (not too much, if you use canned) when you blend the vegetables and tofu at the end. If you don't like pineapple, try some maple syrup and fresh ginger, mix with some apple cider vinegar (to taste) and add just enough to coat at the end and warm it up.

Tonight I tried what I said I was going to do, dry wok the tofu and veggies and then add the bibimbap sauce. It was SO much better! I dry wokked a bag of riced cauliflower, an onion, a bunch of chopped carrots, and a block of chopped tofu. It took FOREVER for the pan to dry out with these watery veggies. I actually think the riced cauliflower might have been the most helpful in drying things out. Unfortunately the carrots steamed, and the rice cauliflower got a little mashed, but overall I was able to hang in there and wait until things started to burn a tiny bit (how I like it). Any advice on how to get things crisper in the wok or which veggies not to use if I don't want them generating a wok of water?

Tonight I tried what I said I was going to do, dry wok the tofu and veggies and then add the bibimbap sauce. It was SO much better! I dry wokked a bag of riced cauliflower, an onion, a bunch of chopped carrots, and a block of chopped tofu. It took FOREVER for the pan to dry out with these watery veggies. I actually think the riced cauliflower might have been the most helpful in drying things out. Unfortunately the carrots steamed, and the rice cauliflower got a little mashed, but overall I was able to hang in there and wait until things started to burn a tiny bit (how I like it). Any advice on how to get things crisper in the wok or which veggies not to use if I don't want them generating a wok of water?

Hey Jen, a few questions. Did you press your tofu before using it? If you didn't, that would explain all of the moisture. Second, was your riced cauliflower fresh or frozen? Last, as I have never heard of dry wok(king) before... is this cooking with no oil hence the "dry" wok?

Here is a recommendation when cooking with tofu. I freeze the tofu (firm or extra firm), then defrost and press for 15 to 30 minutes before using. This gives the tofu a different consistency which I love and after pressed there is very little to no moisture and it absorbs everything so much better. I also always cook my tofu first before I add vegetables to allow it to get crispy. Looking at the vegetables you used I can only figure all that moisture coming from either unpressed tofu or frozen cauliflower. The onions have very little moisture and it should dissipate quickly in the high heat and the carrots don't really release enough moisture to make a difference. If you are using frozen cauliflower it won't dry out during cooking unless you do it really slow on low heat and for a long time but there is no guarantee. Again, always press your tofu even you don't freeze (I wrap the tofu in a clean kitchen towel, put in on a large plate or cutting board, place another plate or cutting board on top and then put heavy items on top like a heavy iron skillet. I have seen people put heavy books on top, I have taken 4 cans and put them on the the top plate or cutting board and let it press on it for a while. Just monitor as weight shifts and you have to adjust what is on top occasionally) If you are using frozen cauliflower rice it will always have a lot of moisture so try to look for riced cauliflower in the produce section or make your own. I throw cut up fresh cauliflower in my food processor and pulse until it is riced. And if you are using non frozen cauliflower, remove the tofu once done, then cook the cauliflower on the high heat alone to cook off the moisture, then add the carrots and onion and then add back the tofu and toss with the sauce.

We had delicious pasta last night. One can coconut milk, one can tomato paste + one tomato paste can of water, three cloves garlic, and salt, pepper, and paprika. I served it over WW pasta. We licked the bowls.

Dear Jenny, sometimes I freeze tofu, and I don’t always press it, but I often cut it in cubes and bake it. It adds a nice chew.

Thanks for the recipes and ideas, Tantalizing and Chancie. I totally am feeling so much more capable learning from you both.

Tonight was a win! I dry wokked (okay- I made that term up- I just mean cooking with no oil and no water in a wok) carrots, onions, tofu, and petite brussel sprouts. It was not watery which was great. I cooked it till it was starting to brown. Then I added. 25 cup of Gochujang (I'm forever thankful, GeorgiaMa'am!) after it was off the heat. The flavor was perfect!

Then I kind of ruined it by having a Rawmantic vegan vanilla bar after for dessert which made me way too full (It's full of nuts and seeds.). Note to self: Brussel sprouts are incredibly filling :hamactor:.

I was surprised how well the petite Brussel sprouts worked! Total victory of a meal!

I'm excited to start pressing my tofu and also to try Chancie's pasta recipe! :byebye:

We went to the Broadway play Prom (about a lesbian who goes to prom) in midtown and then walked down the street to a vegan restaurant where we had sliders, fries, lemonade, and peach cobbler. No complaints!

I'm going to try to make my own Riced Cauliflower pizza crust; then pile some cubed squash on top, after I use slices of Chao Field Roast Cheese on the cauliflower crust, then pair some tiny broccoli buds and black olives and ChiKn tenders on top, then roast it in the oven.

Hopefully it turns out okay.

If not, I can always smother it in Caesar salad dressing.

Then we went back to my brother Dave's house and had dessert on the roof, a mix of bakery items (cookies, cupcakes). As usual, too full, but good. It was nice being out on their rooftop on a night with beautiful weather. Also, we had been arguing over text but somehow being in person and breaking bread together (and papadum) seemed to create a peaceful vibe.

Made spaghetti sauce last night.


Fry, hamburger meat, green pepper, onion, garlic powder, oregano, basil.
cool it and add to sauce in bowl. Refrigerate overnight.
Made spaghetti tonight , heated up sauce.
One kaiser cut in half, buttered, garlic power and lots of Parm. cheese. Put in oven under broiler till crispy.

I love it.
