Tonight will be wings. Think I'll put them in the Instant Pot for 10 minutes then put them on the grill for awhile.
Last night was an Orema burger. Well-done burger patty on a low carb tortilla with slaw, dill pickles, green onions, mayo and mustard. It was perfect.

So, for a change of pace...try this tonight:
Here’s a stomach-churning feat: A woman from Arizona devoured not one, but two 72-ounce steak dinners in about an hour at the Big Texan Steak Ranch in Amarillo.
The lovely lady from Tucson, AZ completed not only one, but TWO 72oz steak meals back to back. First in 26:40 and second 34:30 .
The woman, identified as professional competitive eater Miki Sudo, . She’s won the women’s title for six straight years at the famous Nathan’s Hot Dog Eating Contest.
In addition to the 72-ounce steak, the Big Texan challenge includes a salad, a shrimp cocktail, a baked potato and a roll. You get the meal for free if you consume it all in an hour.
Finding anyone who can consume two of those meals — that’s nine pounds of meat — in one sitting is rare. It’s rarer to find a woman who’s done it.
However, it’s not a record. In 2015, 120-pound Molly Schuyler of Nebraska ate THREE Big Texan 72-ounce steak meals in a mere 20 minutes. She gobbled the first in under five minutes, destroying the record of 8 minutes, 52 seconds set by fellow competitive eater Joey “Jaws” Chestnut in 2008.

I had some frozen veggie eggrolls from the health food store with sweet chili sauce. They were amazing- note to self: check brand because... fabulous!
Dessert: Greek yogurt with strawberries, banana, kamut puffs, cinnamon, and walnuts.
2nd Dessert: Half of an XOXO dark chocolate bar with sea salt and caramel. Highly recommended. Like... OMG!

I dry-wokked 4 veggie hotdogs. I did that without cutting them up. I hadn't thought to cut them up but next time I will.
I ate them with sauerkraut and mustard.

I should log off and make something to eat for supper, because I haven't had much to eat today and I need to eat.
I have some meatless 'meat balls' in the freezer, so I can brown some of those up and add some high-protein pasta and chop up some fresh zucchini and add a cup or two of roasted tomato sauce to create a nice simple Italian-type meal. And sprinkle some Hemp Hearts on top, I think, with a dollop of non-dairy 'sour cream'.
Half hour of cooking, until I can fade into post-supper coma-ville land. :jester:

I stopped by a produce stand out in the country and bought some awesome stuff: a huge head of organic butter leaf lettuce, and several pints of berries (marion, blackcaps, rasp, and blue berries) and some gorgeous flowers (Dahlias and sunflowers and Queen Anne's Lace and Snapdragons).
So I plan to have a nice summer garden salad, complete with freshly sliced roma tomatoes and for dessert? I bought a home made Pumpkin Brownie Cake with frosting and chopped walnuts.
Maybe a small cup of freshly made pour-over coffee, to accompany the cake, too.
And, water (keep hydrating).

I bought some wild salmon today and am using the salmon with sweet pickle relish, minced sweet Walla Walla onions, chia seeds and homemade vegan egg-less Mayo to make a 'salad' of sorts. I bought cranberry-pumpkin seeded organic crisps (zero sugar impacts, thank heavens) to accompany the Salmon 'salad'.
Fresh local berries for dessert.
Maybe a tiny slice of the Pumpkin Brownie Cake, later tonight, right before bedtime.

Gosh, just got home after a long day at work and it is still exceptionally warm (99+ degrees).
So it is going to be a light supper of a small garden salad, a small bowl of fresh berries, and a tiny slice of Pumpkin Brownie cake.
Water to drink.
I did however pick up some caulifower, last time i shopped for fresh produce. When it cools down, i plan to make a creamy cauliflower soup to use in a classic "Mac & Cheese" baked pasta dish. Can't wait to have that for supper, one night soon.

Left over instant mashed potatoes with butter, gluten-free brown gravy made from a package mix so not at all home style, with some hamburger crumbles mixed in. Whole, petite, cooked from frozen green beans. Water to drink, haven't been hydrating enough, and dessert. What I don't know yet. It's a toss up between lemon meringue pie, brownies or cheesecake. However any of those will require some extra effort so I might just wind up having some canned fruit and calling it a day.

I've been trying out Amy's new wraps lately. Here's my negative reviews of a few:
Spanakopita wrap - total fail
Vietnamese wrap - fail
Tonight I had one that I've become very into. The flavors are amazing. It was:
Moroccan Tagine wrap - total winner
It's made with sweet potatoes, chick pea, apricot, etc. I wonder when I'll get tired of it.
For dessert I had 3 Carr's Entertainment Crackers. I had the wheat flavor. I've been into this variety box of Carr's crackers since the pandemic started. When we were in Fire Island I served them for dessert and my family was nonplussed. I think it was because I had said I was providing chocolate chip cookies for dessert but then had forgotten to pack them :blink:
Portabello mushroom stroganoff......home made and made by me. Delicious if I don't say so myself.

Fig & Kalamata Olive crisps, to be used with Fig & Chili jam, and Garlic-Jalepeno smoked "cheese" spread, and a bit of Pine Nut Hummus. And a few dark green Romaine leaves (dry, sans dressing). A small assortment of fresh berries. And, maybe later, a small cup of Dark Raspberry sorbet. Lots of water handy to srink. Today, instead of sliced cucumbers and lime in the water, I am cutting up watermelon and freezing cubes of the watermelon to sit in the water, to make a light tasty refreshing drink.

Cubed cantaloupe, with plenty of sea salt and freshly cracked peppercorns.
Small bed of organic salad greens with freshly chopped pineapple.
A few fig & kalamata olive crisps, with a touch of freshly ground almond butter.
And lots of water. Hydration is key to optimal health, so i need to catch up on drinking more water.
For dessert? I stopped by a bakery and picked up some freshly baked macaroon cookies. I love coconut cookies. And maybe a small scoop of Dark Raspberry Sorbet, to go with a couple of cookies.

I had a Wahlburger with baked fries, fake Mtn. Dew and Outshine bars for dessert. I wanted to get cherry but they only had watermelon to go with my lime bars so I took a bite of the watermelon and then a bite of the lime and went back and forth. It wasn't a cherry limeade by any measure but it wasn't bad at all. I definitely didn't hate it, since I ate 4 bars total. Water chaser.

Last night was a Fresh Market Salad. Spring greens, sliced strawberries, tomatoes, grilled corn, sliced avocado, spiced pecans with Lemon basil dressing. Oh soo good!
Going to gather the ingredients to recreate this at home.
Homemade wine. Finally got my hands on some yeast! This batch came out really good. Practice improves..lol..just like fine wine🍷

I had an Amy's samosa wrap. Meh. The Moroccan Tagine wrap is hands down the winner. It has the most flavor, a good mix of spice and sweetness.
I had dark chocolate for dessert. It was so much better than the white chocolate.

I had an Amy's samosa wrap. Meh. The Moroccan Tagine wrap is hands down the winner. It has the most flavor, a good mix of spice and sweetness.
Did you know that Amy's dishes are purposely designed to be kind of flavorless? It's one of their selling points. The person who came up with the idea for the company wanted international foods but without much spice. Go figure.

I made one of my favorite dishes which consists of mixing together:
Brussels sprouts, beets, lentils, feta cheese, EVOO, garlic, toasted pine nuts, avocado, and artichoke hearts.
For dessert I had Ritter Sport white chocolate with hazelnuts. Now, I know I dissed white chocolate yesterday but this was really good.

Amy's cheese enchiladas. It was a frozen dinner that also had with it corn and black beans. I really like her cheese enchiladas. I mixed in steamed cauliflower and my favorite hot salsa: La Victoria Extra Hot Salsa Jalapena.
More of the white chocolate with whole hazel nut bar for dessert.

I didn't use their salad dressing. Had them put it on the side and added lemon and olive oil.
I needed a break from those wings and that did the trick.
Tonight I’m going to grill some honey mustard chicken, in marinade now, on my new charcoal Weber, as well as some corn on the cob. Watermelon for desert.

Have you thought about thawing them and then shredding the meat off the bone to add into something else like a salad or a creamy type dish that will hide any residual ick taste? I had to do that once with a bag of chicken patties that just didn't taste great at all and it was a lot more tolerable that way.

Last night, I had a giant Caesar salad with chunks of lemon pepper chicken that I had to get rid of before it went bad. I just took the skin off and flaked it in the salad and it was really good. I had 2 peach Outshine bars for dessert and fake Mtn. Dew to drink. I've been a soda kick lately. Hope I squash it soon.
Tonight, it's pizza, fake Mtn. Dew and Outshine bars. I already had a pineapple one earlier (my favorite) so dessert may be peach or tangerine. Tangerine ties for second with coconut so it'll likely be that.

I had Mary's Gone Crackers crackers (superseed classic) with spreadable cheese, cucumber, and paprika. "Mary's Gone Crackers" always look so good but I've had them once before and didn't like them. Still because they look so good I decided to try them again. Oh my gosh, no more. And I know so many people like "Mary's Gone Crackers" but I absolutely do not want to hear from anyone who does like them :byebye: . I DO always like the rest of this dish but the "Mary's gone crackers" ruined it.
I also had a Green Giant's frozen side dish that I like a lot. It's sliced green beans with almonds. Normally I add evoo and garlic, and it's fabulous. This time I decided to make what I will call the lazy man's green bean casserole. I added onion frizzles and cream of mushroom condensed soup. Oh my goodness, it was okay but overall just silly.
Then for dessert I tried some Gavottes thin butter crackers. They were very bland. :vigil:

I hear you about the blandness of Mary's Gone Crackers (brand of crackers). I thought they were pretty good until I found better crackers, so I gave them up in favor of a new line of crisps by Lesley Stowe (Rain Coast Crisps).

I really like the crisps. They come in a variety of flavors and blends (cranberry, olive, garlic, cheese, rosemary). And they are delicious and very tasty and filling. I like them a lot.

Have you also tried Divina's Fig Spread? I use the fig spreads and couple them with smoked gouda or other vegan plant based cheeses to make a tasty snack, which ends up being more of a small meal.
I like the Chili Fig Spread and the Orange Fig Spread. Both are very delicious. :)

For supper tonight, I plan on making a party tray of Rain Coast Crisps, brie, Jalapeno spread and Divina's Fig Spread with a portion of Red Grapes and cubed cantaloupe on the side.

I made my spaghetti and meat sauce. I use ground turkey for more than one reason really. CCB is a vegetarian and I try not to cook smelly meats in our small apartment.......PLUS.......ground turkey is less fatty. Then I add a jarred sauce of my liking and doctor it with spices. Oh and a little wine.......gives it a nice zing. Then of course you boil up the spaghetti.

I had this vegetarian / tofu version of "chicken salad" that I get from the health food store. It's packaged in a way that it goes bad really quick, so I have to catch it at just the right moment, which is silly but it's so unique that it's kind of worth it. I always have it on celery sticks.
I made a no-lettuce salad with hearts of palm, mushrooms, and Brianna's poppyseed dressing. If you have not had Brianna's poppyseed salad dressing- omg, it is soooo good. My brother and his husband served it on salad one night, and I had to get it. It's in many stores.
I had a Lindt white chocolate truffle for dessert, and I was so bored by it. I was just curious whether I'd like it.

You can get the small Krystals with bread, meat, they out mustard & ketchup, cheese, & onions. You can add mayo & bacon if you like. I get mine like that! They are cute..about 3" x 3"...square shaped....Corn pups are small corn dogs...:)

I grew up with Krystal burgers, but it was my sister who took to them more than I did. I call them "dinner roll burgers", only with the thinnest piece of mini meat (product) and they were steamed (yuck). They were excellent fare if you were hungry after they shut the bar down on you. Even better that they were cheap, because back then, my friends and I would drink our money away and be down to our last few dollars. You could get a sack of those little "burgers" for damned near next to nothing (usually less than $5 and the bag would be full of lots of them). We would fill up on them, so that was how I ate (tolerated) them back then.
These days, I can't even look at a Krystal burger, or even a White Castle dinner roll burger and want to eat it. It's just disgusting, and since I no longer drink alcoholic beverages or beer anymore, I don't anticipate being forced via poverty and drunkenness to eat them. No one is quite sure what is in that tiny little patty of "meat product", but I have a sneaky suspicion that a reasonable person wouldn't want to eat it.
Just keep in mind that you always get exactly what you pay for. LOL

It has been awhile since I have had carrots. I am not supposed to have them. But I just had to have carrots tonight.

There's a bakery in NYC that only sells freshly made carrot cake. People love it and line up around the block for it. You can choose between regular carrot cake or raisins and walnuts inside. Both are amazing!

Tonight I had an Amy's Moroccan Tagine wrap and a few squares of white chocolate with hazelnuts.
On our vacation (starting this past Monday, got back today), my dinners were as follows (from restaurants):
Monday: Something called Asian Brussels sprouts which I imagined would be those deliciously charred Brussels sprouts but were instead barely cooked Brussels Sprouts with a fried coating. Oh my gosh, I felt totally sick after them. I think it was the combination of all those undercooked Brussels sprouts and not having fried food for a long time.
Tuesday: Chinese but not a nice place. I had scallion pancakes and some tofu and veggie dish. Totally felt sick after. Started to worry I had COVID because why did I feel horrible after dinner again! Yes, I was googling until late at night worrying!
Wednesday: Finally a good meal that did not make me feel sick! Ironically it was a big Mexican meal of a bean burrito and nachos! Go figure! :vigil:
Thursday: We went to a seafood place on the water. They didn't really have good veggie stuff so I picked up some beans and brown rice from the Mexican place to bring there (picnic table type seating), and BB and I shared onion straws and corn fritters. Again... I did not feel sick at all after, and that was a lot of fried food. It was actually absolutely delicious. Oh, and for dessert I had vanilla ice cream with dark chocolate and caramel.
I'm all caught up on describing my dinners :byebye:
I'm thinking of portabello mushroom stroganoff over egg noodles. The vegetarian dish is really easy and quite tasty. Hopefully CCB can get beyond the total sour creaminess (she's so picky.....but you gotta love her).

Coconut shrimp in the air fryer.
I think an avacado salad. I have a new dressing I want to try, Hatch chili ranch.
Strawberry short cake. I have sliced the berries and added a little sugar to get the juices going. I even added some blue berries. I bought a little square piece of vanilla coke cake that I will slice horizontally. That way I can layer the berries in the middle. Sounds good huh?

We are having a celebratory dinner because Daddy got a really exciting promotion/shift at work that is going to mean a lot of really good things.
I'm roasting a chicken, and we have one ear of corn ready for harvest, and a few tomatoes that are ready and lots of broccoli and salad greens and some small potatoes. Farm to table celebration in the house!

Let's see... dinner last night was an Amy's Moroccan wrap. Then dessert was Greek yogurt with strawberries, walnuts, banana, kamut puffs, and cinnamon.
Tonight I got home from my walk and saw that BB had baked a healthier version of chocolate chip cookies. OMG, that was definitely the first part of my dinner. Then I had some spanakopita appetizers (frozen / microwaved). As Besame says, eat dessert first! :wine:

6 toaster type waffles with syrup, 4 hot dogs cut into fourths length-wise and cooked in microwave until brown, applied 2 rounds of squeezing the grease out with layered paper towels.
2 large glasses of milk to drink
worked hard outside most all day and did not think to eat
pretty tight in my stomach when all of dinner got in there around 9:00 p.m. but the discomfort passed quickly

I could barely sleep last night, thinking about my fears about starting work back at school in September. So tonight I had a bit of a pity party dinner for myself. I ordered in Chinese AND ice cream.
Pearls Chinese Restaurant, my fave in my neighborhood:
orange tofu (this is like orange chicken, but I just tell them to sub tofu- oh my gosh, I love the flavor of the orange peel)
sesame noodles (the solution to everything)
Ben & Jerry's:
Brownie sundae (vanilla ice cream, brownie, caramel, m&ms -- a pandemic favorite of mine)
It was tasty but, of course, overly filling. While I ate I listened to Randy Rainbow videos on youtube.
Oh, and it was raining outside, which always makes ordering in extra fun.

I am stuck on Sun Dried Tomato wrap (tortillas), so I am having another wrap tonight for supper.
What I do is use organic romaine lettuce and I wash and dry it and chop it up, then add other types of lettuces to the main batch. Then I shred a few small parsnips, raw beets and break up a small floret of cauliflower and toss it all together. If I have a little bit of dark purple cabbage, I shred a bit of it up too, to add more color to the dry salad greens mix. After I get it all mixed up, I take a small Lime and quarter it and use one quarter of Lime to freshly squeeze over one portion of salad greens I stuff into a Sun Dried Tomato Wrap. Once I do that, I usually eat it just like it is, unless I need a small dose of protein, then I add some finely chopped walnuts and a generous smear of Mascarpone cheese to the shell of the wrap.
So, there you have it: My summer stand-by supper wrap. It's filling.
Until my sweet tooth begins to rage. When that happens, I just nosh on a miniature cupcake thingy and maybe have a few spoonful's of my favorite Dark Raspberry Sorbet. I might have that for dessert tonight.

I had 3 jalapeno poppers, about 5 baby smokehouse potatoes and a bowl of broccoli topped with real butter and shredded Colby jack cheese.
1/2 cup of cherry juice. Which is how much I poured out of a bottle of cherry juice to make my next batch of homemade wine. And oh my gosh, that juice is good. I just hope I get some good cherry wine.
I made sugar free lemon pudding the other day. I mixed blueberries and put them into little parfait dishes. I topped it off with a mixture of sour cream and lemon juice. ...
Let me tell you, oh so refreshing!

I was on my way home wanting to stop and get dinner. I said, nooo. You have an Italian sausage patty and half a log of marinating mozzarella cheese. Ok, so something Italian-ish.
No pasta, but butter noodles cooked and drained. Added a handful of spinach, garlic, olive oil and chopped cherry tomatoes. Put in the chopped sausage patty. Tossed in chunky chopped mozzarella cheese. Oh and sprinkled balsamic vinegar on top.
So that's what I came up with, with the stuff I already had.
Possible cold watermelon later.

I maowed down all of the Sun Dried Tomato Wraps I had on hand for the wraps I make with veggies. So I'm going to open up a different bag of wraps: Rosemary & Olive Oil wraps.
I am going to go make a wrap right now and have something to eat, since I waited until real late to have supper. Maybe just a half of one, save the other half for lunch tomorrow.
Cantaloupe (cubed) on the side.
Water to drink.
And a few sun dried figs for dessert. The Sierra type of fig. They're pretty yummy. :)

Thanks to you and Firegal :) Your postings on air-fryer meals always sound so good and encouraged me to get another one.
I’m still learning how to use it. I made some shrimp the other day and they came out rock hard after 8 minutes! It cooks really fast. Next time I’ll keep an eye on them and will cook them for less time.
So glad I tried it again. I no longer need my toaster oven.

So we went out to eat tonight, the first time eating out since Covid started. We went to the Marina, a restaurant that sits on the river and has outdoor seating. We ordered a "small plate" of fish tacos which equals 2. For entrees, I went with an ahi tuna steak and Bevi went with crabmeat sliders. The food pricing had gone through the roof since we were last there. The service was slow and the food disappointing to say the least. Thinking hibernation isn't so bad after all. On the way home we did stop at the grocery store to buy veggies and burgers to throw on the new grill (Nexgrill....similar to a Blackstone) that Bevi bought me for my birthday. We are both looking forward to giving that grill a shot this weekend.

I stopped after work to pick up storm supplies. Things that don't need to be refrigerated. Fruit cups, bars, peanut butter, sandwich thins and some bottled water.
I came home with tequila lime wings and lemon cookie ice cream. That's dinner.
I made sun tea with lemon pound cake tea bags. It's so good cold. Tastes like a vanilla tea!

I've tried a version of this before - it may have been the same brand and it may not. I keep it in the refrigerator at my mom's house. I was really pleased with it. It's nice to keep around. It's basically just chopped basil in olive oil.
