Worked late, went drive thru at McDonalds ... drove off with a dozen burgers, eight were plain (burgers & bread only) and the other four were regular plus one large fries. Kelly and Kevin became so excited when I came in the front door with those familiar looking McD bags. We shared the fries. Those mixed bully dogs of mine are so spoiled.
Fried Macaroni and Eggs...The macaroni is boiled al dente and strained then thrown into a hot cast iron skillet with bacon grease. Once the macaroni has browned a little bit a few beat up eggs are poured over the top and all fried together. It is a Pennsylvania Dutch dish that I was raised eating. Most people when they hear about it say ewww....but seriously it doesn't taste bad if you like the taste of bacon....kinda like potatoes fried with eggs in bacon grease. *Smiles.
2 bags of (saline)fluid drip, to cleanse my kidney's since todays blood work came back high in everything.

Tonight I'll be making my enchiladas. flour tortillas dipped in red chile powder and tomato paste, hamburger, cheese and diced onions, and more cheese on top! and probably some brown rice to accompany it.

I am making a slow cooker dish that is seeming to me a lot like chicken pot pie, sans the dough. I hopelessly adore my slow cooker! (Thank you ONLY!) We will have a Greek salad with that.
For dessert I am sure we will sample the cookies I am making for ONLY's company Christmas party. (Chewy chocolate chip cookies and chocolate pudding cookies with SKOR bar bits melted in.)

Chicken enchiladas! I never made them before. I'm cooking the chicken in the slow cooker with some tomatoes and green peppers and seasoning. Then Teddy is gonna work some magic with the mixture once he gets home and they will be enchiladas ....lol
Oh and we're having Spanish rice with it....and I'm hoping corn....but I think we don't have any.....note to Teddy....lol

we're having left overs...there is pot roast with potatoes and carrots or roasted chicken and angel hair herb pasta....for desert we have 3 berry pie and vanilla ice cream or 3 other ice creams to choose from: mint chocolate chip, mud slide (coffee with oreo cookie) or moose (looks like death by chocolate) something or other ..I can't remember the exact name *shrugs*

Went to Bellingham WA with a friend. She was looking for a dapper wool vest. And we found one at Lummi Fisheries along the waterfront. I didn't even know Bellingham now has such an interesting and fishy smelling pier area of stores to rival Seattle. We are going back to check out all the little shops some time. She found her wool vest (yes, some Canadians are cold blooded) lol. We hit Happy Hour at Bob's Burgers and Brew in Sumas. Yours truly had a tonic water and gin and was feeling suddenly merry by half the glass. Wow. Going down again, and will have to contact some b/f in the area perhaps. Turkey sandwich, salad with champagne vinegarette finished off the meal. Content. :canadian:

Followed by...

Subway was happy to provide me with a BLT sub on 9 grain oat bread with half the bacon (4 instead of 8 slices), no cheese, lots of lettuce, spinach, cukes, tomatoes, bell peppers, banana peppers, black olives, pickles and a quick zigzag of vinegar followed by a singular stripe of chipotle Southwest sauce.
Yum!
I won't lie, though. Before bed, there WILL be either winter wonderland ice cream or peppermint bark as well.

I ate way too many holiday treats at work today ... Grazed the breakroom frequently. *belch* Better to burp now than something else later.
Speaking of "that" subject, one of my dogs has that farting thing going on in the bedroom tonight and it is really b-a-d!!! Big dogs = big farts! I suspect Kevin but am hoping it is Kelly. Kelly quits pretty soon when she falls asleep. Generally, Kevin has a go of it a-l-l n-i-g-h-t l-o-n-g. :(

I cooked hamburgers tonight. I thought I had two bottles of ketchup in the cubbard when I took a bottle to work a couple of days ago.This hamburger with mustard and duck sauce is not so much enjoyable. I keep telling myself it is not that bad, will be over soon and then I can go to bed.

Last night we had chicken parm with a side of spinach raviolis. I made stuffed garlic cheese bread and a cucumber salad to go with.
Weatherboi, if you like cucumbers alot, try this, if you have a way of slicing them razor thin do this and then make the following mixture, start with 1/2 cup white vinegar and 1/4 cup of good olive oil, mix together and slowing add sugar tasting after each tablespoon, when you have reached the sour/sweet taste you like poor over the cucumbers add a thinly sliced white onion, a little salt and pepper to taste and marinate in the fridge until nicely chilled. it's awesome.

a stirfry of zucchini, portabello mushrooms, tofu, celery,purple onion, red bell pepper, garlic, ginger,chervil..the chervil is absolutely a new awesome flavor (to me) i recently discovered, very mild like parsley but different..I think, I will be using it a lot!

Tonight was Filet Mignon, sauteed brussel sprouts, baguette, and cabranet sauvignon.
Last night was eggplant rollatini covered in a homemade red sauce.
Tomorrow is lamb chops, mashed potatoes, red cabbage, and yummy dessert.

So many delicious-sounding meals! Today was about the low-effort meals for me: pancakes and bacon/sausage with the grandkids at mid-day, and then fried potatoes and eggs with leftover steak and brie this evening. Simple but also yummy. :)
Tonights dinner consisted of grilled pepperoni and cheddar cheese sandwich, glass of milk, and a couple cookies.

Today we went to our favorite Chinese place for dinner and had Orange Chicken and Black Pepper Chicken :) We are both so stuffed we can't move!

It's prolly easier to say what DIDN'T we have for dinner....
We went to my mother's and she made:
Ham, turkey, turnip, sweet potatoes, butternut squash, mashed taters, cranberry sauce, pineapple, gravy, pickle tray, rolls,...
We made green bean casserole, and brought a brownie tray and chocolate peanut butter cream pie....
We brought home enough food for a month :| And I got the extra butternut squash to make the doggies some biscuits :)

I pulled some chicken thighs out of the freezer this morning and will more than likely bake them later with BBQ sauce.
I'll dice up a couple russets and a small sweet potato for smashed taters.
Maybe a veggie, haven't decided yet or even looked to see what I have on hand.

Cake and ice cream. Not the planned left over turkey and stuffing butties. I knocked the huge Tupperware box full of leftovers off the worktop onto the floor. I may have been tempted to scoop at least some of it back up but I broke a glass yesterday and had no wish to lacerate my innards with a stray shard. :doh:

And I happen to make killer ones, Trev...They are quite versatile, I also like to do them with tiger shrimp, lime w/ a splash of tequila, melted w/queso and monterey jack cheeses...and then grill them in a little butter and olive oil...and serve them up w/ a lime-pico-de-gallo rice.
Making my special spicy chicken with corn and peas.

Teddy made dinner after all....he made his stroganoff, one of his bestest dishes :) He makes it meatless for me...with lots of mushrooms (also for me!) Soooo good. It's worth getting clean up duty for ;)

I made a homemade sauce with crimini mushrooms, sweet onions, shredded carrots and then added meatballs made from turkey sausage.
I made a fresh bed of salad greens (romaine) to go with it too.

Otherwise, I do have the "pudding" that you get after straining vegetable juice from the juicer....It's very good...has apples, carrots, cabbage, ginger and kale in it. Its like apple sauce with a wicked kick ;)

Chicken breast stuffed with roasted red peppers, goat cheese, mushrooms and pine nuts.
A few tiny roasted fingerling potatoes with butter, a smidgen of sour cream and coarsely cracked back pepper.
Spinach with shallots, garlic and lemon.
Although I usually don't like white wine, I had a very tasty Toasted Head dry chardonnay I got as a Christmas present that I really liked that went nicely with this, go figure.
For dessert I haven't decided yet; I may poach a pear in wine with cinnamon or I may make pumpkin mousse with pralined pecans, I'll let dinner settle first.
I am thinking left over pizza.

I got a piece of fruit while shopping for my client....I forget the name...I love the idea of trying new fruit. It looks like an ugly tangerine..and it has leaves on it. If it's any good I will be sure to find out the name...and get more :)

last night was food from the chefs at work. a piece of catfish with some red sauce, a piece of ham, new potatoes, veggie mix, a small salad and bite size cheesecakes.
tonight whatever the chefs are making I guess.. I don't want turkey or a sandwich again.
Tonight in honor of the New Year I am talking myself out to a really fancy really expensive new restauraunt that I have been wanting to try . I made reservations . =)
