I am going to grill a steak and asparagus and fry some corn. Plus some rolls and a glass of wine or two.

Going to try my culinary skills on a prime rib this afternoon. I'm baking potatoes for twice during baked potatoes. Some fancy green salad, and stuffed mushrooms.
Hurry come home already!

Tonight I will have a chicken & artichoke wrap with feta, tomatoes, cucumber, olives, lettuce and Greek dressing. Also a small Greek salad, all from one of my favorite Mediterranean restaurants. :)

You really need to try "those things." They look like an oblong orange about the size of a grape tomato. Just wash them off and pop them in your mouth ... you eat the entire thing. Oh so tasty ... both sweet and tart.
Get some ... bet you will really like them! :)

I made homemade lasagna tonight for the first time in forever. OMG it was delish. I've been cooking things all week and freezing them. Next is hot tamales. I've been so high energy lately and all i want to do is cook and bake. My freezer is getting full!!!
I am having pepperoni pizza and a cocktail.

I had lunch at IHOP while I was out and about..
I had a spicy chicken. Sandwich and seasoned fries. They were generous with the seasoning and I was happy with that....however....every time I eat out they forget the dang pickle.. it shows a pickle on the menu and yet I don't get one. Pickles are always my favorite part.
I was tempted to get the pumpkin waffle sundae but I was stuffed...another time...I am such a pumpkin whore...
I got home too late to cook but I had toast and jam, some seeds and a tangerine....it sufficed

I made raviolis with red sauce, it should have been good but I used a can of Brookshires traditional sauce, I got a case when they had a $6.00 case of several things. I knew it wasn't going to be what I'm use to. So I used seasonings and herbs to help it along, warning beware It isn't fixable no matter what, the tomato acid is as raw as it comes. It was supposed to be useable right out of the can, no way folks. Next time I need to strip paint off anything I will use it...my poor stomach feels I swallowed battery acid. I pitched it all in the trash what I cooked and every can left.
I am sorry to hear your dinner was so bad. We have Brookshire here too so thanks for the heads up.

Well...
I was in the mood for something kind of different...

I didn't eat lunch until about 3pm today so I think I'm skipping dinner at this point...
Its sold at Trader Joes as is the every day seasoning...they are absolute staples in my kitchen :)
I can't wait for summer and fresh tomatoes and cucumbers. A little vinegar and everyday spice....so simple and good....
Crab Cake atop a polenta cake, with sautéed baby asparagus, and crispy thin strips of fried green onions on top, a side of lobster mac n cheese, and a square of rosemary & thyme bread with sea salt on top.
The appetizer was warm goats cheese with roasted garlic cloves, calamata olive tampenade, fresh shrooms, roasted red peppers with a crostini point
Dessert was 4 bites of a seven layer chocolate decadence drizzled with shaved white chocolate & chocolate sauce...
I ate only half my dinner...so have leftovers for lunch today...
A very pleasant date with my sweetheart...:)

I may go to the place that my client gave me a wicked generous gift card for.. and maybe see a movie while I'm there. Its too cold for outdoor stuff.. says the former hardy New Englander...my mama would be ashamed :(

Dinner tonight overlaps a meeting at a coffee house where I tent to not love the food. They make good smoothies though and they serve breakfast for dinner so I think it will likely turn out to be a coconut water smoothie and some eggs?

I don't know what it is in jalapeños that I crave, but when I get a hankerin its something wicked...

My daughter was thrilled to inform me that today is National Spaghetti Day. Not even making this up. So, in honor of such an auspicious day we had spaghetti with homemade meat sauce, small green salads and garlic bread. It has finally gotten cold here so was a perfect meal to match the weather. (But my heart longs for spring, my Weber, and a perfect steak.....)

I cooked 5 lbs of roast in the crockpot this past Saturday. My dogs split about 3 lbs for breakfast Sunday morning.
For dinner, I had hunk of roast with gravy and melted colby cheese on top, a bagel with philidelphia pineapple cream cheese on it, nuked a bag of those oh so good steam mixed veggies, milk to drink

I had a pomegranate salad. It has pomegranate infused cranberries, flaxseeds, Brussels sprouts, cabbage, romaine, kale, carrots, green onions and a pomegranate vinaigrette. It's the only way I can eat Brussels sprouts because I couldn't taste them.

I had a really awesome chicken salad sandwich on sprouted seed bread with spouts, tomato and onion, along side a small container of bowtie pasta salad, as a late lunch around 3pm.
I am not hungry enough for a full dinner, but will need a little something here soon so I don't wake up hungry during the night. I think I will have Smash Toast...toasted bread with mashed avocado on it.
Edited: Oh yeah, I have some leftover crawfish tail meat to go with the above. :)

I am making a Mojo Pork bowl tonight. A little rice goes in the bowl first, and then a ladle of Mojo Pork. Around the outer edges of the bowl I will add a couple of tablespoons of black beans, some green onion, a few chunks of fresh tomato, and some orange slices. Lastly, a scoop of mashed & seasoned avocado on top.

I'm making spaghetti squash and homemade sauce. The sauce has tons of veggies since I went a little nuts at the farm stand. It has eggplant, zucchini, mushrooms and peppers. Garlic of course. And the sauce is mostly diced tomatoes.
The spaghetti squash is taking far too long for my liking and hunger level. And I started it firstly. It'll be 7 before I eat.

I sliced turkey kielbasa real thin and tossed it in a pan with fresh mushrooms, onions and a bag of frozen grilled veggies (zucchini, yellow squash, red onion and red peppers). I added a splash of broth and a ton of yummy seasoning and let that simmer for a while. I wound up putting it on a bed of basmati rice and topping it with a smidge of Yum Yum sauce. Flavored water to drink and LifeSavers candy canes for dessert.

I came home and threw a sweet potato in the oven.
Then I started sautéing a chicken breast in lovely herbs de Provence infused oil...
I realized I had Brussels sprouts to use up so I added them in...added some water to steam them up in the pan...then I put a little chicken bouillon in the water...sprinkled on some 21 season. Salute...and voilà...
For dessert....
Its safe to say I am addicted to my yonana frozen yogurt machine.
I made banana/ strawberry/mango/berry froyo....it was freaking amazing. I may never buy ice cream again. And if you knew me....you'd know that statement was practically blasphemy for me....

I had a chipotle black bean burger and sweet potato fries again but switched it up a bit. I toasted a flat sandwich roll on the baking sheet and added some squares of jalapeno snack slices to the burger. I put sliced Claussen strips on top with steak sauce and had myself a really good burger and fairly good for me. The sweet potato fries were super yummy as well. Chocolate milk to drink.

I had a mix mash of stuff: 2 turkey dogs, tapioca pudding, flan and a Greek yogurt flip with almonds and cocoa.
I think that I will make Texas chili for dinner.
Shhh...I could get kicked out of Texas but I made homemade beans and put them in the chili.

We went to The Cheesecake Factory for an overdue date night and had Buffalo Blasters (chicken, cheese, buffalo sauce, hot sauce in fried wrappers) for an appetizer, I had cashew chicken, he had a burger, and we got cheesecake to go that we will be eating tomorrow - mmm!

Started with fresh sliced sashimi with wasabi. We tried a new flavor of beer. Blue Moon with cinnamon. Tastey!
Sitting out back next to the fire waiting for grilled pineapple and shrimp. It's being served over rice.
We picked up some fresh Bakava from a local bakery, for later. Yummy!

I am making Almond flour, Coconut Waffles, topped off with Maple syrup, eggs over-easy, and perfectly burnt peppered Bacon.
Making meals with Almond flour and Almond milk is low-impact, on the glycemic index, and helps with stabilizing blood sugar levels.
When I make Almond Coconut Waffles, I make a bunch of them and use them for open face sandwich meals. :)

I had veggie Alfredo with garlic knots...and a really good beer called Ninja Love...with strawberries and vanilla...yum
Ris had spinach/mushroom/feta lasagna with garlic knots..
Tonight I'm making a sweet potato and maybe chicken.. and a veggie of some sort...
I am craving a homemade cheeseburger and fries.

Tonight I sauteed some shrimp, zucchini, and yellow squash seasoned with S&P, fresh garlic and cayenne. I also cooked a pot of polenta for the sauteed stuff to be piled on top of. Good stuff!

I made an enormous salad, chipped up everything very small.
Here is what I put in it:
lettuce
a third of a yellow bell pepper
a third of a red bell pepper
a third of an orange bell pepper
tomato
lots of crutons
parmesan cheese
caesar dressing
thousand island dressing
2 large milks
How about that for a healthy dinner?? ;)

I'm just grazing tonight. I have artichokes, olives, local made tortilla chips and salsa, feta and white cheddar cheese, raw slices of zucchini, cucumber, yellow squash, apple slices & dates, and I may or may not make some garlic humus. Oh yeah, and blueberries! :)

I'm having a pomegranate salad. It has pomegranate infused cranberries, flaxseeds, Brussels sprouts, cabbage, romaine, kale, carrots, green onions and pomegranate vinaigrette.
It's a bit of a tapas or "homemades" night.
Some spoonfuls of pasta salad
Some breaded jalepeno shrimp
Some onion/cheese puff pastry
I call these "homemades" after hearing about the term from Silver Linings Playbook. Nothing actually was 'homemade' though, so...there's that.
I had a grilled cheese and turkey sandwich with potato salad and bread and butter pickles. Ice tea to drink.

My original intent was to make stuffed bell peppers with ground turkey, quinoa, diced tomatoes, and veggies but I decided that I did not want to heat the house up by turning the oven on. So, I chopped all of the veggies including the bell peppers and cooked the whole concoction in my dutch oven on the stovetop. I may have made enough for a small village, so feel free to drop by for dinner if you're hungry. Lol!

MY usual.....4oz lean protein (chicken strips...grilled) with steamed green veggies...(green beans/broccoli florets/asparagus spears)....this will be my dinner for 9 more days....

Going to try to copy my Mom's beef stew. Using that dutch oven I bought yesterday.
Trying new culinary skills when I have time :) I work so late most of the time. Can I just say, this past week or so, that Vietnamese Pho, Korean BBQ, and the green Chile Verde was so good. Easy when you have the right ingredients and definitely do-overs.
Psst..fresh ginger is my new friend.

I've got a chicken in the oven....I seasoned it with butter under the skin and some herbs and spices. And also some chicken bouillon in the pan water. I cut up some red potatoes and some carrots and threw them in the juice.
I'm making dinner while we still have power. Apparently the ice may cause us to lose power...a chicken will hold us over for a while. In may make potato salad while I'm in the mood to cook...

burgers on the smoker...no bun for me....BUT a romaine leaf wrap...:)..it is the simplest of things that please me.....and steamed veggies for me...green veggies...

snowing here and my girls are both home, so nice. Made lasagna with marscapone cheese and waiting for the right time to eat. Also made buttermilk belgium waffles with bacon for breakfast. Nice to have them both to cook for.

I made a big pot of Beef & Sweet Potato Soup w/ Greens (http://picketfencepaleo.com/beef-and-sweet-potato-soup-with-greens/). In this instance I used collards for the greens and added a yellow onion to the mix. It's so good and warm too, so it knocks the cold right off of you! :)
4 oz. shrimp sautéed in garlic herb seasoning with a mixed green salad medley....

Chicken thighs and drums hold up better in the crock...especially bone in. I pit them in frozen most times. I think that may actually help as well..

Im going to start, sweet potato chipotle chili. However upon further ingredient investigation , there is no beans. ?? Has cauliflower in it though. I'm going to add, smoked pecan jalapeño sausage at the end. Perfect chilly day to try this.
