I am trying to hit all the places in Indiana that are only found here while I am here! Lol.
Yesterday was Buster platter and onion rings from Halls for lunch. Dinner was TGIFridays with my Bestie...yes we have those in FL, but nothing is quite like sharing a brownie obsession with my bestie! Lol
Today will be Brevins for fish and chips for lunch, dinner will be at one of the local mexicanplaces with about 30 of my law enforcement friends :)
Tomorrow will be Claras Pizza King pizza and not sure where else
Yes..the theme for this weekend trip to Indiana...food and friends! Lol. Then back to FL Monday, to go back on my salad diet :)

I was slicing and dicing onion, garlic and jalapenos for a pot of 3 bean chili with ground turkey that has been cooking on low for a couple of hours. I'll slice an avocado and heat some corn tortillas to complete my meal. Believe me when I say, there will be plenty of leftovers for freezing in individual servings.

I think I will cook something nice for me, just because! I am thinking of doing a grilled chicken breast or pork chop lightly brushed with bber & chipotle bbq sauce with a side of baked potato - topped with fat free sour cream, chive and fat free mild cheddar, honey ginger glazed carrots, mixed beans and mushrooms. I may add some grilled pineapple to the plate.

It's been a while since I have had a kitchen to cook in, what I want when I want.
So....
I made homemade spaghetti sauce, simmered it for a few hours.
Added caeser salad and garlic bread with home made garlic butter (fresh garlic).
It was all very yummy. The manchild who still lives at home had a company dinner tonight and was quite bummed that someone else was cooking real dinner and he was going to miss it. He cooks often for himself, all sorts of good spices and things here I can borrow. I saved him some for tomorrow.

My supper was delicious! As a Saturday night treat I made hot chocolate with a kahlua whipped cream drizzled with a little caramel. I could live on this.

tonight was not as healthy as i have been eating..a baked chicken thigh, mashed potatoes, mac and cheese from the blue box and a tortilla.
washed it down with unsweetened iced tea..
Tonight I will be making loaded baked potato soup. Another long work week so here's to a hot meal at lunch time.

I buy homemade tamales from our local Mexican Market once a month and make a tamale casserole. It is tamales layered with cheese and onions and sour cream sauce then smothered with more cheese and green onions on top and baked for 30 mins at 350. I swear the calories are left out :-)

Ooooh...I want some of that too! I haven't made any in a while. I usually do the pork roast in the smoker for a while, then finish it in a sweet bbq sauce in the crockpot for a few hours. Hmm....I think I need to cook some this week!

Going to try my hand at..
Sweet and sour chicken, with made from scratch sauce. I don't have pineapple chunks, will have to do with crushed! Red peppers and onions, chicken in tempura batter, using the fry daddy. Going to have left overs for sure!

Pete asked for a dish I make out of what's usually in the pantry and the freezer.
I sauté sliced peppers, diced onions, and one cube of minced garlic. When everything is nice and brown, I transfer the veggies to a pot. I brown one pound of ground turkey with one packet of taco seasoning and transfer it to the same pot. I add two cans of stewed tomatoes, one can of chick peas, and one small jar of sliced green olives.
It's not very fancy, and it's not really chili, but it is so satisfying on a cold Sunday night.

I only ate half silly bear...and that was only to compensate for lacking of lunch...and its been 7 hours since that sammich...i wanna see how the catfish turned out! BTW...are there actual veggies? Besides the cabbage in the slaw? You know I love my veggies baby ;) Not nearly as much as I love youuu though!

I made a vegetarian chili. I replaced the ground beef with ground soy seasoned and browned, then I threw in my veggies and extra spices and let it simmer. I put it into a bread bowl and topped it with light cheese . There is nothing better than edible dishes!

I don't know what I'm having tonight, but my lunch was a little bit everything. I had a milk shake, water, one stuffed grape leaf, a shwarma platter, a cheeseburger and I picked up chocolate for my afternoon. I don't know why I ever thought all of those things together would be a good idea. In my defense, I didn't expect to get lebanese AND Dq. That just sort of happened, thanks to a friend.

FYI-when craving foods with vinegar (sauerkraut) it is an indication the body is low in potassium....

Last night I took my girl for Lebanese, she loved it... yay!! She hasn't been a fan of all the restaurants I take her too. She says none of them have cutlery, not completely true. She was happy to have a fork last night, even though she ate most of her shwarma plate with her pita.
Tonight I made a baked cannelloni. Filled with spinach and feta and baked in leftover sauce (from the other night) and smothered in mozzarella. I served it with salad and homemade garlic bread. I love pasta in the winter.

I made a fairly disgusting dinner tonight. I did manage to eat it but it certainly wasn't a magical find.
I made a salad, and I use that word loosely, with mushrooms, horseradish (from a jar), dijon mustard, vinegar, garlic powder, organic facon bits (soy protein "bacon bits") and hearts of palm. The lettuce I had had gone bad, so I didn't even get to have lettuce in it :(. And the worst part? There are leftovers. And the even worser worst part? I saved them.

I had a bunch of mushrooms to use up, so I simmered chicken thighs, took them out of the broth, added all the mushrooms and brown rice. Cleaned the chicken, and now it's just yum!

A whole veg dinner. The older I get, the better they taste. I wanted to go out for sugar last nite. I was able to talk myself into trying a recipe from a Dr. Oz show. I made it last nite. It is really good and No Cooking.
1 cup uncooked steel cut oats
1/2 cup p-nut or whatever butter(I chose almond butter)
1/3 cup tart cherries
3tblsp honey
1 teasp vanilla
Mix, refrig, cut into squares, yum

The dinner experience got better for me as it progressed. First I had the strangest experience. I chopped up a bunch of Thai red peppers (I love spicy!) and then BB and I started coughing and sneezing like crazy! It was a huge reaction that didn't end until I sealed up the peppers and carried them down to the garbage. Who knew? It was a very disconcerting beginning to the dinner experience.
Then I had a good but very bland starter. I sauteed brussel sprouts with vinegar and olive oil and ginger and garlic and walnuts. Gosh, how could I have flavored that better? It was just very bland! I had planned to use those peppers but I think even if I didn't almost kill us with the peppers it would have been a weird combination anyway.
Then I had a bowl of tomato soup. Can't go wrong with that. Yum.
Finally a bowl of blueberries, also quite good.
I threw out the awful mushroom concoction that I'd saved from last night.

Dinner tonight..
I just put ribs in ye ol crock pot, can't go wrong there.
And going to try smashed potatoes. Little red potatoes boiled, then lightly smashed with a fork, onto a cookie sheet, with a little olive oil, salt and pepper,( and when I say salt and pepper, (both of them are freshly ground) perhaps, some cheese and bacon. Under broiler for a few min..and ta da...yeppers , that's what I'm going to try!

I am tinkering with new foods. So tonight I made buckwheat with gluten free mushroom soup and free range chicken and it was pretty good.
My butch did not grow up eating casseroles. Or anything in a crockpot. So my comfort go to meals from what i know to throw together is an adventure for her no matter what I make it out of.

First, I had some of Breyer's new Birthday Cake ice cream. It has sprinkles in it. Pro! It has a version of 'cake' in it. Not sure, but looking like it's a con.
Last, I had some Breyer's Waffle Cone ice cream. Good texture and blend of yummy bits. I'm not a super huge chocoloate fan, so the chocolate chunks were just a smidge too big for me. No worries! That's what the side of spoons are for.

My picky ass only ate pork sausage on thin crust or pepperoni on thick crust. That probably explains it. You know my deep-seated hatred for any and all veggies. Hence my difficulty with healthy eating. I must say I have ate things this month that I swore I would never. Go figure!

I did the same thing with fried zucchini! We're from Michigan and my mom used to make fried green tomatoes and fried zucchini slices when I was a kid. So when we were at a friend's house last summer, she was all "here, try my fried zucchini" and I didn't want to be rude so I did try it and it was teh Nom.
I still don't like fried green tomatoes, but I love zucchini that way.

So the heating element in the bottom of my oven died. I can broil but not bake. The maintenance dude came out and ordered the new element for the bottom so we should be back in cookies by the end of the week. So I says to my SU, "Spousal Unit, what sounds good for dinner?" because we need to get something out from the freezer. Everything thing that sounds goods today requires an oven! And I know it's just because it's not working... If we had oven-ness, salad or stir fry would sound good... ;)

I have been on Atkins...so I had a big ol chef salad with buttermilk ranch dressin and some sugar free jello...I would have rather had some cornbread, beans, fried taters and a piece of blackberry cobbler...but that's alright...I have had plenty of those good eats in my life...part of the reason I am on Atkins...hahahaha but I have lost 100+ lbs so I can't complain too much :wine:

I'm going to do a flavorful and likely non healthy dinner. I haven't had a good homecooked meal in a few days so I'm going to marinade a lean pork cut roast in apple juice, maple syrup, a dollop of dijon mustard and herbs for several hours.
Later on I'll cook that up nice and slow with roasted pan red potato, honey ginger glazed carrots, turnip, squash, green beans, brussel sprouts and swiss chard.
I'll likely make a bit of gravy to go over the meat.
If I have any dessert at all, I will likely tie it back in featuring apples and pear.

I was going to make chicken and rice with a great tomato, cucumber and boconccini salad, but as I started to get everything ready to make dinner I all of a sudden became very nauseous so I am now lying in bed watching the Hunger Games on Netflix. Looks like ginger ale for dinner tonight. Uuuggghh.

We are getting ready to have my favorite sort of meal. All nibbles, olives, roasted pistachios, crunchy, crusty bread, herbed chevre, maybe some Manchego, pear slices, red currants, a lovely old vine Zin and a Sauv Blanc that plays hide and seek on your tongue.

With the weather going to pound us for a couple of days, I don't want to take any chances on not being able to eat. I'm throwing together some simple dishes to munch on that I won't even have to heat up (if the power goes out) so I will be ready.
For tonight I ordered chinese. They were running an awesome special so I got enough to do me tonight and at least part of tomorrow.

Avocado, Sun-Dried Tomato, Red Onion and Cilantro Fried in a Crisp Wrapper. Served with a Tamarind-Cashew Dipping Sauce.
Heavenly Fried Macaroni and Cheese
Crispy Crumb Coated Macaroni and Cheese Balls. Served over a Creamy Marinara Sauce.
Chicken Piccata
Sautéed Chicken Breast with Lemon Sauce, and Mushrooms. Served with Angel Hair Pasta.
It was amazing!!!!!!!!
(really wish I could have taken 3 orders of the fried macaroni and cheese home) LOL :)
Okay, I know that was an over the top explanation of dinner, but it was just that good! :)

yesterday she made egg drop soup...chicken with mushrooms and zucchini over rice, crab ragoons....with cheese cake for dessert ....boy was I in heaven
no clue what to do about dinner tonight though

I tried a new recipe (http://www.livestrong.com/recipes/food-courtings-healthy-buffalo-wings-bleu-cheese-sauce/) last night, healthy buffalo wings.
It wasn't as crunchy as deep fried food, but it was very tasty, and
I have an idea about how to crunch it up without using all of the olive oil in the recipe.
I skipped the flax seeds all together, blech.
